MC Resident Spotlight Jackie D.

Jackie was born in Boonton Township, NJ as one of six children. She graduated from the University of Massachusetts Amherst with a Bachelor of science in Geology.

She went on to work in engineering for AT&T, making surface acoustic wave devices that were inside wires, laid under the ocean. After moving to North Carolina with her husband for his company, she stopped working to homeschool her four children – Nicole, Danielle, Renee, and Noelle, who all love her dearly. After her children were out of school, she continued to work in the education system as a Special Needs teaching assistant until she retired in 2021. We love Jackie here at The Goldton! She is a kind and loving soul, always wanting to help others.

May Activity Highlights

Outings: This month we will be going to lunch on a Monday. We are going to eat at First Watch on Monday, May 20th. We have Target on May 1st; Walmart on May 8th; A nature walk on the 15th, (this will be a easy walk). We are going to Aldi and Dollar Tree on the 22nd and Goodwill on May 29th.

Port Of Call: Mexico! Patty will have a delicious Mexican lunch and then at Happy Hour we will have a great treat for you! Family and friends are always invited to our Port Of Call Happy Hour!

Mother’s Day Afternoon Tea: We will be celebrating all the wonderful women and mother’s here at The Goldton. Patty and Jennifer will be setting up a great tea time with finger foods, dessert and tea. This tea party will be May 13th at 2:30pm. RSVP for families.

Exercise Challenge: You will see a new activity on the calendar this month called “Exercise Challenge”. Jennifer will write up a fun movement for you to do each time and this will be in the Bistro. This is a great way for you to do some movement on your own. Moving your body helps us feel better both mentally and physically. I would love to see you participate and take advantage of these exercise sheets.

Hydration

Hydration

I know, I know – we have already been told to drink more water so we don’t end up dehydrated, but it ends up being harder to do than we think. If you have a dry mouth or feel thirsty, you are already somewhat dehydrated. Check your urine – if its a dark yellow color and has a strong smell, you may not be getting enough fluids. Avoid soda and coffee, these will not help your hydration. Milk is a good substitute if you are bored of water. Also, adding slices of lemon and or cucumber to your water is great too. Dehydration can lead to dizziness and low blood pressure, and that puts us at risk for falls; so as the spring turns into summer – don’t forget to drink that water!!

Memorial Day

Memorial Day in the United States is a solemn occasion observed on the last Monday of May each year. It serves as a time to honor and remember the brave men and women who made the ultimate sacrifice while serving in the U.S. military. Originally known as Decoration Day, it traces its roots back to the aftermath of the Civil War when communities began decorating the graves of fallen soldiers with flowers and flags. Over time, Memorial Day evolved into a national holiday, marked by ceremonies, parades, and moments of silence, as Americans come together to pay tribute to those who gave their lives in defense of their country. It’s a poignant reminder of the debt of gratitude owed to those who have fought and died to protect the freedoms and values cherished by all Americans.

Recipe Spotlight:

Layered Fruit & Shrimp Salad

Ingredients:
2 cups watermelon balls
2 cups cantaloupe balls
2 cups honeydew balls
2 cups sliced peaches
2 cups sliced pears
2 cups quartered orange sections
2 cups sliced plums
1 cup fresh blueberries
1 cup fresh strawberries
1 cup cubed pineapple
2 dozen (21-25) count boiled shrimp
2 cups crawfish tails
1 recipe fruity yogurt dressing
1/2 cup chopped pecans

Directions:

In a large glass serving bowl, layer fruit by alternating stratas of color. Once all the fruit has been layered, line shrimp and crawfish in a decorative pattern around the edge of the bowl. Top with fruity yogurt dressing and toss the mixture to blend the dressing into the fruit. Sprinkle with pecans and serve immediately.

Fruit is not just for dessert anymore! With its wide range of colors and textures, nothing makes a more beautiful entree salad than layers of fresh or canned fruit. Why not create an interesting and unique summer salad by combining colorful, healthful fruit with fresh shrimp or other seafood?

Associate of the Month

Merle Sousa

Merle Sousa Associate of the Month

Merle was born and raised in a devout Catholic home as an only child in Fremont, California. At an early age he became involved in music and his parents and music teachers were very supportive of his interest. He went to Catholic school until high school. At that time, music became his replacement for God, and he wanted to make it “big” and if not, he wanted to become a music teacher. He played in several professional bands as he was working toward his music degree. In 1975, Merle accepted Christ as his personal savior – and he responded to a call on his life to serve God with the talents and abilities that he was given. He left the bar lifestyle to teach at the local Christian High School. In 1977 he met Margie while she was working at the same school. They were married in 1978, and they had two boys, who are now married, giving them four incredible grandchildren, (2 boys here in TN, and 2 girls in MO). Merle was a Music and Worship pastor, then went on to be an Associate Pastor and eventually Sr Pastor of a church plant. Later Merle became a long-haul truck driver. When his first Grandson was born, he moved to Southern California for one year before moving with them to Tennessee in 2015. In Tennessee, Merle worked for a church and then moving on to driving the bus for The Manor at Steeplechase and now at The Goldton! “I love being around people and adding Bible Study and Choir to my involvement. It’s been a blessing to work with this incredible staff and be around all of you as I transition into retirement. Margie and I will celebrate 46 years of marriage this summer.”

Resident of the Month

Joanne Gatterer

Joanne Gatterer Resident of the Month

Joanne was born in Lancaster, a small town in New York. In High School, Joanne made a point to do state testing, this was important to get a good job. So, after High School, Joanne went to work as a Legal Secretary. After her father retired, the family moved to Fort Lauderdale, Florida. Joanne soon found a job with a small young firm as a Legal Secretary. This job was better than any higher education; Joanne learned priceless information about investing, business and much more.
Joanne always wanted to travel, and her friend Virginia did as well. She had a great time traveling with her, and Joanne is still friends with Virginia to this day. Joanne got married and they adopted a baby boy named Jim. Once Jim joined the family, Joanne was a dedicated mother, going into work only to help when they needed extra help. Joanne still loved to travel – and the family went many places. Joanne loved visiting Alaska, a place they went to many times after they retired. Joanne has 3 Grandkids who she loves very much. They are a big reason she is here in Spring Hill. Her son Jim and his family live here, so Joanne and her husband moved from Florida to Spring Hill. Joanne is very proud of her Grandchildren. The oldest is currently in Medical School. The middle child is Graduating from college and will be going to Medical School. The youngest child is still in school, and loves computers and computer coding. We are so lucky to have Joanne here at the Goldton. You will see her taking the morning exercise class, playing Bingo, or running out the door to go someplace!
