Rodney "Coach" Collins and Bob Nystrom

Rodney "Coach" Collins and Bob Nystrom

We wanted to take a second and recognize the passing of two of our sweet residents, “Coach” and Bob. Both of these sweet men resided in the 100 Hall Neighborhood. “Coach” was an incredibly funny gentleman who loved to walk around, especially in the garden. Mr. Bob was a long-time resident of the Prado and was a warm smile that brightened up our hall. We will miss these two men very much.

January Recipe Spotlight

Chicken Pot Pie

Chicken Pot Pie

Chicken pot pie is a staple here at the Prado when the weather is cold. We would love to share with you our delicious recipe that you can find cooked with love by one of our incredible chefs!

Ingredients:

1/3cup butter or margarine
1/3cup chopped onion
1/3cup all-purpose flour
1/2teaspoon salt
1/4teaspoon pepper
1 3/4cups from 1 carton (32 oz) Progresso ™ Classic Chicken Broth
1/2cup milk
2 1/2cups shredded cooked chicken or turkey
2cups frozen mixed vegetables, thawed

Directions:

Heat oven to 425°F. Prepare pie crusts as directed on box for Two-Crust Pie using 9-inch glass pie pan.
In 2-quart saucepan, melt butter over medium heat. Add onion; cook 2 minutes, stirring frequently, until tender. Stir in flour, salt and pepper until well blended. Gradually stir in broth and milk, cooking and stirring until bubbly and thickened.
Stir in chicken and mixed vegetables. Remove from heat. Spoon chicken mixture into crust-lined pan. Top with second crust; seal edge and flute. Cut slits in several places in top crust.
Bake 30 to 40 minutes or until crust is golden brown. During last 15 to 20 minutes of baking, cover crust edge with strips of foil to prevent excessive browning. Let stand 5 minutes before serving.

Directions:

Preheat oven to 350 degrees.

In lasagna pan, pour enough sauce to lightly coat bottom of pan, place 4 noodles side by side on the bottom lengthwise.

Spoon 1/2 cheese mixture over noodles smooth, layer on 1/2 beef mixture, sprinkle with Mozzarella cheese, press down and top with 1/3 of remaining sauce.

Place 6 lasagna noodles crosswise, side by side, may have to snap off ends to fit in pan.

Repeat step 2

Place 4 lasagna noodles lengthwise over top of sauce.

Lightly spread remaining sauce over top of noodles

Cover with plastic wrap and aluminum foil, bake for 35 minutes.

Uncover and continue to bake for additional 15-20 minutes.

Let rest prior to serving.

Resident of the Month

Nancy Conner

Nancy Conner, Resident of the Month January 2024 | Madison Heights at the Prado

Our spotlight resident for the month of January is Nancy Conner, she was born on August 6, 1946. She received her associate degree in liberal arts. Nancy enjoys walking outside and socializing with friends. A few of her favorite places to visit are New York City, Nashville, California Hollywood.

Nancy enjoys bingo, painting and walking around the community with the other residents. She loves to talk about her life history and how she taught Sunday school in Woodstock, GA. Mrs. Nancy enjoys doing her daily crafts and exercise. Thank you, Mrs. Nancy, for being a part of the Prado family!

What makes the Smoky Mountains smokey? The mist is formed from the vapor given off by all the plants in the mountains. When the vapor is released, the molecules that make up the gas scatter blue light from the sky, giving the fog its blue color.
