The Health Benefits of Pumpkin

The Health Benefits of Pumpkin

As fall unfolds, pumpkin becomes a star ingredient in many recipes. Beyond its festive flavor, pumpkin is a powerhouse of nutrition with several health benefits:

  • Rich in Vitamins: Pumpkin is a fantastic source of vitamin A, which supports eye health and boosts the immune system. It also contains vitamins C and E, which help fight inflammation and protect against chronic diseases.
  • High in Fiber: The fiber in pumpkin aids digestion and helps maintain a healthy weight by keeping you feeling full longer.
  • Antioxidants: Pumpkin is loaded with antioxidants like beta-carotene, which can help protect your cells from damage and reduce the risk of chronic diseases.
  • Low in Calories: For those mindful of calorie intake, pumpkin is a low-calorie food that can be enjoyed in a variety of dishes without adding excess calories.

Try incorporating pumpkin into your diet this October with recipes such as pumpkin soup, roasted pumpkin seeds, or a comforting pumpkin pie. It’s a delicious way to enjoy the season and nourish your body.

This Month in SC History

As we celebrate October, let’s also reflect on some significant moments in South Carolina’s history:

  • Battle of Kings Mountain: On October 7, 1780, the Battle of Kings Mountain marked a major American victory in the Revolutionary War. The battle, fought between Patriot militias and Loyalist forces, was the first significant American win following the British invasion of Charleston. This victory was a turning point in the war and compelled British General Cornwallis to abandon his campaign in North Carolina.
  • Masked Mob Searches Henry Laurens’ House: In October 1765, a masked mob searched the home, counting house, cellar, and stable of Henry Laurens. The mob coerced Laurens into swearing that he didn’t know where the stamps were hidden. The following May, the British repealed the Stamp Act, and locals celebrated the repeal for two nights.
  • Rev. I. DeQuincey Newman Elected as SC State Senator: On October 25, 1983, Rev. I. DeQuincey Newman was elected as a South Carolina State Senator from Richland County. He made history as the first African American to serve in this role since 1888.

Healthier Snack Options for Sweets

For many seniors, satisfying a sweet tooth can be part of a balanced diet. However, it’s important to choose snacks that are both delicious and nutritious. Here are some healthier alternatives that can offer a sweet fix without compromising health:

  • Fruit Parfaits: Layer Greek yogurt with fresh berries and a sprinkle of granola. It’s a sweet treat that’s rich in protein and antioxidants.
  • Baked Apples: Core apples and bake them with a sprinkle of cinnamon. This warm, comforting snack is naturally sweet and high in fiber.
  • Nut Butter with Banana Slices: Spread almond or peanut butter on banana slices for a satisfying, nutrient-dense snack.
  • Homemade Energy Balls: Mix oats, honey, and a bit of dark chocolate for a quick, sweet treat that’s also packed with fiber and healthy fats.

These snacks are not only healthier but can also be adapted to accommodate any dietary restrictions or preferences.

Resident of the Month

Grace Reese

Grace Reese, Resident of the Month, October 2024 | Spring Park Travelers Rest

This month, we are delighted to shine a spotlight on a remarkable individual who has touched many lives both within and beyond the walls of Spring Park. Please join us in celebrating Grace Reese, our October Resident of the Month!
Born in charming Pickens County, Grace was lovingly raised by her parents, Henry and Sybil Burns. Growing up, she was deeply involved in the family business, helping her father run a general store in Marietta, SC. Her early experiences instilled in her a strong work ethic and a deep sense of community. Grace pursued her education with great enthusiasm, earning an Associate’s Degree from Limestone College. Her commitment to her faith was evident in her active participation at Ebenezer Church in Travelers Rest, where she was a cornerstone of the congregation.
In the 1960s, Grace and her first husband, Fred Cox, embarked on a new chapter by owning and operating the Travelers Motel in Travelers Rest. After successfully running the motel until the 1980’s, she sold Travelers Restaurant to her sister-in-law, Joyce Cox, while the motel was passed on to someone else, continuing a cherished legacy.
After retiring, Grace and her late husband, Gentry Reese, moved to the serene surroundings of Lake Keowee to be closer to family. They relished their time together fishing and camping, embracing the great outdoors with a passion that mirrored their zest for life.
Since joining Spring Park, Grace has become a beloved member of our community. She has a deep love for reading, solving puzzles, and delighting in the company of her fellow residents. Her warm personality and engaging stories enrich our community, and her joy in participating in animal visits and social events exemplify the vibrant spirit she brings to us every day.
We are truly grateful to have Grace as part of our Spring Park family. Her life is a testament to the values of hard work, faith, and family, and we are honored to celebrate her this month. Congratulations, Grace– thank you for being such an inspiring and cherished member of our community!
