Niki Bailey Associate of the Month

Niki has been an integral part of the Spring Park family for nearly 5 years, where she consistently provides dedicated and compassionate service. We feel fortunate to have Niki’s caring presence enriching our community.
Originally from Hickory, NC, Niki moved here six years ago after growing up in a military family that allowed her to experience different places. Her commitment to healthcare stems from a lifelong passion for nurturing others, which motivates her pursuit of becoming a nursing assistant.
Niki is a proud mother of two boys and one girl, and she shares her home with three dogs, a cat, and a bearded dragon named Luna. Outside of work, she enjoys fishing, kayaking, and indulging in her love for reading and writing.

Whether you enjoy chatting, sharing stories, or have a special talent to offer, there’s a place for you here.

• One-on-One Visits: Spend quality time chatting and listening to our residents.
• Interest Groups and Clubs: Start a club or interest group based on your hobbies and passions.
• Choir/Sing-along: Share your musical talents by singing or playing an instrument.
• Technology Assistance: Help residents navigate technology, such as emailing and texting.

Recipe Spotlight:

Grilled Grouper with Mango Salsa Recipe

Ingredients:
2 mangos, diced into 1/2” pieces
2 jalapeño, seeded and minced
1/2 red onion, diced into 4” pieces
1/8 cup fresh cilantro, minced
1 tsp lime zest
2 oz fresh lime juice
2 garlic cloves, minced
Sea salt, to taste
8 grouper or red snapper fillets
Avocado oil
Salt
Freshly ground black pepper

Directions:
Combine all the salsa ingredients. Cover, and refrigerate.
Brush both sides of the fish with oil and season with salt and pepper.
Preheat grill to medium-high heat (350° to 400°) and make sure your grates are clean or the fish will stick.
Cook fish with lid closed for 3 to 4 minutes on each side, or just until fish begins to flake and is opaque in the center.
Serve with mango salsa.

Susan Hendrix Pede

Susan Hendrix Peden was born in Columbus, GA, and grew up in a military family, experiencing diverse cultures due to her father’s army assignments. Among their many postings, the family spent several memorable years in Bangkok, Thailand.
Susan is a proud alumna of Spartanburg Methodist College, where she cultivated a passion for childcare that shaped her career for several years. She married and is blessed with a son, Chase.
A pillar of her community, Susan is a founding member of Anderson Mill Road Baptist Church in Spartanburg, SC, where she dedicated over 35 years of active participation. She lent her voice to the church choir for most of those years and generously volunteered in various church programs.However, Fred’s true passion lay in the world of automotive endeavors. He traversed the roads of New England for years, peddling car parts and supplies before establishing his own venture, Fred’s Used Cars in Grafton, Massachusetts. Known for his knack for negotiation, Fred thrived in the art of ‘doing a deal’, steering his business towards success for nearly four decades until its sale in 2020.
Outside of the business realm, Fred found solace in the great outdoors, particularly as an enthusiastic duck and goose hunter, often accompanied by his beloved chocolate labrador, Boon. He admires a good chili, which was our inspiration for this month’s Spotlight Recipe- White Chicken Chili.
Amidst life’s highs and lows, Fred faced the heartbreaking loss of his daughter, Liz, to cancer in 2018. His son, Fred IV is still in Massachusetts, and his second wife, Charlie, is also still there being cared for by her daughter. Fredrick has five grandchildren, scattered across the bustling cities of Boston, Pittsburgh, and Washington D.C., to the serene landscapes of Ogden, Utah.
