Hawaii Volcanoes National Park

Hawai‘i Volcanoes National Park protects some of the most unique geological, biological, and cherished cultural landscapes in the world. Extending from sea level to 13,680 feet, the park encompasses the summits of two of the world’s most active volcanoes – Kīlauea and Mauna Loa – and is a designated International Biosphere Reserve and UNESCO World Heritage Site.

Najah Ross

Najah Ross Associate of the Month

Najah Ross was born in Patterson, New Jersey, Najah has a strong familial bond with her 2 sisters and is the loving mother of 7 children—4 girls and 3 boys. As a grandmother of 5 grandchildren, family is at the center of Najah’s life.

Najah pursued her high school education at Passaic County Institute in Wayne, New Jersey, where she majored in culinary arts. Her passion for caregiving emerged early in her life, and at the age of 19, she embarked on a journey to make a difference in the lives of the elderly. In 2013, she became a Certified Nursing Assistant (CNA), a role she has proudly held for over a decade. Najah served as the Housekeeping Executive Manager at Tryp by Wyndham in downtown Savannah for 5 years.

During her leisure time, Najah finds solace in reading and indulges in her culinary skills, particularly her expertise in preparing Italian cuisine, with homemade lasagna being her favorite dish. She draws inspiration from the works of acclaimed author Eric Jerome Dickey, particularly his novel “Milk in My Coffee.”

Najah’s professional journey led her to Legacy, where she joined as a Care Associate in May 2024. Her unwavering dedication and compassion resonate with her role in caring for the elderly, ensuring their well-being and comfort. Najah’s profound impact on the lives of those she serves reflects her unwavering commitment to excellence.

Lizzie The Comfort Dog visits Legacy at Savannah Quarters

Meet Lizzie, the beloved comfort dog who brings a touch of joy wherever she goes. Lizzie, a true friend to the Legacy community at Savannah Quarters, has an incredible way of brightening everyone’s day with her warm presence and gentle demeanor. Her handler, Cindy, is nothing short of amazing, guiding Lizzie with love and care as they journey through Savannah together. Whether she’s visiting local spots or making new friends, Lizzie’s wagging tail and comforting spirit spread smiles and happiness to all who meet her. In a world that could always use a little more warmth, Lizzie and Cindy are a shining example of kindness and connection.

How to Age with Grace
Aging brings inevitable changes, whether from the 20s-30s or 60s-70s. More facial lines, grey hair, breathlessness on stairs, and slower completion of tasks remind us of the passage of time. Embracing a positive attitude is key to aging gracefully.

Summer Chicken Parmesan

Summer Chicken Parmesan

Ingredients:
1 ounce white whole-wheat flour (about 1/4 cup)
1 large egg, lightly beaten
⅔ cup plain whole-wheat breadcrumbs
4 (4 ounce) chicken breast cutlets
⅝ teaspoon kosher salt
½ teaspoon freshly ground black pepper
2 tablespoons olive oil, divided
Cooking spray
3 ounces part-skim mozzarella cheese, shredded (about 3/4 cup)
1 ½ cups chopped zucchini (about 1 medium)
1 ½ cups cherry tomatoes, halved
2 garlic cloves, thinly sliced
¼ cup chopped fresh basil

Directions:

1. Preheat broiler with oven rack in middle position. Place flour, egg and breadcrumbs in separate shallow dishes. Sprinkle chicken with 1/2 teaspoon salt and pepper. Dredge chicken in flour; dip in egg and dredge in breadcrumbs.

2. Heat 1 1/2 teaspoons oil in a large skillet over medium-high heat. Add 2 cutlets; cook 1 minute on each side. Place on a baking sheet coated with cooking spray. Repeat procedure with 1 1/2 teaspoons oil and remaining cutlets.

3. Top cutlets with cheese; broil 1 1/2 minutes (an instant-read thermometer inserted in the thickest part should register 165°F). Heat remaining oil in skillet. Add zucchini; sauté 1 minute. Add remaining 1/8 teaspoon salt, tomatoes and garlic; sauté 4 minutes. Serve with chicken, and top with basil.

Scrumptious Tomato Tart

With tomatoes being in season, this recipe is sure to be a hit!

Ingredients:
1 sheet frozen puff pastry, thawed
1 onion, thinly sliced
1 teaspoon olive oil
2-3 large tomatoes (multiple colors make a beautiful tart, but red works just as well)
1 cup of your favorite cheese (such as blue cheese, mozzarella, feta, or Parmesan)
1 tablespoon Italian seasoning, or chopped fresh herbs like basil and oregano

Instructions:
1.Preheat the oven to 425 F and line a baking sheet with parchment paper or nonstick aluminum foil.
2.Stretch out the puff pastry on the lined baking sheet. With a fork, poke small holes along the bottom.
3.Add onions and olive oil to a skillet over medium heat. Sauté, stirring frequently, until soft — about
5 minutes.
4.Sprinkle cooked onions over the pastry dough, then top with tomato slices so they don’t overlap.
5. Sprinkle with cheese and half of your seasoning or herbs. Season with salt (or salt replacement, if you’re avoiding sodium) and pepper to your tastes.
6. Bake for 25 minutes until the crust is golden. Sprinkle with the remaining herbs, cut into squares, and enjoy!

Robert Burrage

Robert Burrage Resident of the Month August 2024

Robert Burrage was born in Chattanooga, TN, and embarked on a remarkable journey that began when he joined the Air Force at the age of 18. During his military career, he specialized in Armory and was stationed in diverse locations, including Korea, Saudi Arabia, Guam, Taiwan, and Japan. Notably, Bob was present during the signing of the Korean Armistice.

Outside of his military service, Bob cherished his family deeply. He was married to his sweetheart, Ostyneo, for 52 years. Though they didn’t have children of their own, they formed a close bond with a young man named Thomas. Bob and Ostyneo’s family later expanded when Thomas married Joanne, and they welcomed two sons and a daughter.

After retiring from the Air Force, Bob transitioned to work at Georgia Ports and Gulf Stream, where he dedicated 20 years before retiring once more. In his leisure time, Bob pursued various hobbies including jewelry making, plastic canvas crafts, and ceramics. He was also actively involved in creating toys for the Toys for Tots campaign.

Bob’s faith is a cornerstone of his life. He enjoys attending Bible study sessions with his family on Wednesdays and makes it a point to attend church every Sunday. His commitment to service, both in his career and personal life, reflects a life rich with experiences and meaningful connections.

National Immunization Awareness Month

National Immunization Awareness Month (NIAM) is an annual observance held in August to highlight the importance of vaccination for people of all ages. Together, we can help raise awareness about the importance of vaccination and encourage people to talk to a healthcare provider they trust about staying up to date on their vaccinations.

Staying up to date on your vaccines is one of the best things you can do to protect your health. If you are pregnant or have a medical condition that puts you at higher risk for infections, talk to your health care provider about which vaccines are right for you.
