We’re excited to announce a Veterans Day Program on November 11 at 3:00 pm in the AL Dining Room. This special event will feature Debi Scott, a local cabaret singer, who will help us pay tribute to the courage and sacrifices of our veterans. Let’s gather together to show our appreciation and respect for those who have given so much for our freedom.

World Diabetes Day: Understanding and Managing Diabetes Beyond Medication

Every November, the world comes together to mark World Diabetes Day, a global awareness campaign aimed at promoting better understanding, prevention, and management of diabetes. Diabetes is one of the most common chronic conditions today, affecting millions of people worldwide. While medication plays a vital role in controlling blood sugar levels, lifestyle choices are equally important in maintaining good health and preventing complications.

The Two Main Types of Diabetes

Type 1 diabetes is an autoimmune condition in which the body’s immune system mistakenly attacks the insulin-producing cells in the pancreas. As a result, the body cannot produce insulin, a hormone that helps regulate blood sugar. People with Type 1 diabetes must take insulin daily to survive.

Type 2 diabetes, on the other hand, occurs when the body either doesn’t produce enough insulin or becomes resistant to it. This type is often linked to lifestyle factors such as poor diet, lack of physical activity, and being overweight, though genetics also play a role. Type 2 diabetes is far more common and can often be managed or even prevented through healthy living.

Managing Diabetes Beyond Medication

Medication helps control blood glucose, but managing diabetes successfully requires a holistic approach. Here are some essential lifestyle strategies:

Healthy Eating:
Focus on a balanced diet rich in whole grains, vegetables, lean proteins, fruits, and healthy fats. Limit sugary drinks, processed foods, and refined carbohydrates that can spike blood sugar. Practicing portion control and eating regular, balanced meals can help keep glucose levels stable.

Regular Physical Activity:
Exercise helps the body use insulin more effectively and lowers blood sugar naturally. Aim for at least 30 minutes of moderate activity most days of the week — brisk walking, cycling, swimming, or even dancing are excellent options.

Weight Management:
Maintaining a healthy weight can improve insulin sensitivity and blood sugar control. Even a modest weight loss of 5–10% can make a significant difference for those with Type 2 diabetes.

Stress Management:
Chronic stress can increase blood sugar levels. Techniques like meditation, deep breathing, yoga, or spending time on hobbies can help reduce stress and improve overall well-being.

Regular Checkups:
Monitoring blood sugar, blood pressure, and cholesterol levels regularly helps detect potential problems early and keep diabetes in check.

Recipe Spotlight

Zucchini Slice Muffins

Ingredients:
1 boneless pork loin roast (3 pounds)
1-1/2 teaspoons salt, divided
3/4 teaspoon pepper, divided
1/4 cup olive oil, divided
3 medium apples, sliced
1-1/2 cups unsweetened apple juice
6 medium onions, sliced (about 5 cups)
3 tablespoons balsamic vinegar
1-1/2 cups frozen pitted dark sweet cherries
1/2 cup cherry juice

Instructions:

Preheat oven to 350°. Sprinkle roast with 1 teaspoon salt and 1/2 teaspoon pepper. In an ovenproof Dutch oven, heat 2 tablespoons oil over medium-high heat; brown roast on all sides. Add apples and apple juice to pan. Bake, uncovered, 50-60 minutes or until a thermometer inserted in pork reads 145°, basting occasionally with pan juices.

Meanwhile, in a large skillet, heat remaining oil over medium heat. Add onions and the remaining salt and pepper; cook and stir 8-10 minutes or until softened. Reduce heat to medium-low. Cook 35-40 minutes or until deep golden brown, stirring occasionally. Keep warm.

Remove roast and apples to a serving plate; tent with foil. Let roast stand 10 minutes before slicing.

Skim fat from pork pan juices. Place over medium-high heat; add vinegar and cook 1 minute, stirring to loosen browned bits from pan. Stir in cherries and cherry juice. Bring to a boil; cook 10-15 minutes or until mixture is reduced to about 1 cup. Serve pork, apples and onions with cherry glaze.

Claudie "C.L." Arsndorff

Claudie Lewis Arnsdorff

Claudie Lewis Arnsdorff (C.L) was born April 13, 1947, the only child of George Louis & Willie Mae Arnsdorff. C.L grew up with numerous cousins that were like siblings to him.
C.L. graduated from Effingham County High school in 1965. While in school, he was the Vice President of The Effingham County Future Farmers of America Chapter. He married his high school sweetheart, Willene in 1966. C.L. joined the Georgia National Guard and served 6 years. He started his career at Union Camp which eventually rebranded to International Paper where he retired after 43 years. He is still fortunate to be surrounded by loyal & lasting friendships made at work.
C.L. is a lifelong member of Bethel Lutheran Church where he attended Sunday School and was an active member of church activities. He was a member of Luther League Youth Group, played softball on the Church Softball League, sang in the Church Choir, served on the church council, worked at the Food Pantry, attended & organized the Senior Citizen luncheons. C.L. also enjoyed growing gourds and gardening. He was a member of the Georgia Gourd Society. One of his favorite past times was deer hunting with family & friends.
C.L. has two children, Mark & Joy. He has always enjoyed spending time with his son-in-law, daughter-in-law, 4 grandchildren, 1 grandson-in-law and 1 great granddaughter. C.L. & Willene built their loving home on family property where C.L grew up and is now the home of his entire family.
He may not say much, but his smile and laughter say it all. Congratulations, Mr. C.L.!

Associate of the Month

Callie Hall

Meet Callie Hall, originally from Charleston, South Carolina! She’s a proud mom of two – one son and one daughter – and moved to Georgia when she was just four years old. When she’s not at work, Callie enjoys spending time outdoors hunting, camping, and fishing, as well as relaxing and watching sports.

Callie joined the Legacy team in July as a Housekeeper, bringing her love for cleaning and her passion for helping others feel comfortable in a fresh, welcoming space. She takes great pride in ensuring that our community looks and feels like home for our residents.

One of her favorite parts of the job is working alongside her best friend, Chelsea together, they make magic happen by keeping our assisted living community sparkling clean and smelling amazing!

Congratulations, Callie, and thank you for your hard work, dedication, and the care you show in making sure every resident’s room is refreshed and inviting. We’re so grateful to have you on the Legacy team!
