Associate of the Month

Bethlehem Admasu

Bethlehem Admasu Associate of the Month

Congratulations to our Associate of the Month for March, Bethlehem Admasu. She is a talented and caring Med Tech at Legacy Ridge at Sandy Plains. Bethlehem joined our community about six months ago and has been an asset to our community from day one. She has been in the Senior Living Care profession for over three years and is currently going to Atlantic Technical College and majoring in Business Administration. Bethlehem also has her own business called “Skin Shaba” that features skin care and hair products. Another talent of Bethlehem is that she is a make-up artist. If you want your lipstick to look amazing, get tips from Bethlehem!

Bethlehem is a first-generation Ethiopian American born and raised in the Atlanta area. She is married to her husband, Deneiro and they have two children, Noah, 12 and Elizbeth, 3.What inspires her to be so caring and impactful with our residents is her philosophy to treat them as she would want her mother or grandmother treated. Her advice to anyone joining this caring profession is to talk and listen to the residents. Also to be positive every day! What great advice for all of us. Thank you, Bethlehem, for enriching the lives of our residents every day and your beautiful positive influence on us all.

Hello Sandy Plains Community. As we are quickly approaching the third month of the new year…I am still so excited to have joined this wonderful community. I am looking forward to getting to know you all better.

Serving our residents with care and dignity is still the “why” to what my team and I strive to do daily. It’s with great pleasure that I can serve you and your family. I would like to take the time to welcome each new resident to our beautiful home here in Sandy Plains. Let’s continue to care, share and appreciate one another.

We are looking forward to a beautiful Spring season where we will begin to enjoy more outdoor activities and grow vegetables and flowers in our courtyards.

Chef Joe and the Grand Canyon Challege

Chef Joe and his staff take great pride in cooking healthy and delicious food for our residents. He is looking forward to cooking many fun and tasty meals in March inspired by the Grand Canyon the National Park we are studying and wrapping many activities around this month. Our residents and their families are big fans of Chef Joe. Even Luna our weekly therapy dog loves him!

Judy LaFleur

Judy LaFleur Resident of the Month

This March we recognize Judy LaFleur as our Resident of the Month. Judy joined our community five years ago this May. Judy was born and raised in Winchester, Massachusetts with her sister. She moved to New York after high school and went to work for American Airlines. She met her future husband, Barry in NYC in 1961 and had three children while livingin Queens, New York. Her husband, Barry was transferred all around New York and New Jersey until eventually being transferred to Atlanta in 1981. She immediately became involved with the Newcomers Club and made many lifelong friends. Bridge was her favorite activity with her friends. When Judy became an empty nester. She went to work for ATT for eight years and really enjoyed her time there.

After she and her husband retired, they loved traveling with close friends all over the world including a trip on the Orient Express and a safari in Africa. She is a doting grandmother and really enjoys spending time with her grandchildren. Her Border Collies kept her busy and entertained as well.Judy enjoys many activities at Legacy Ridge at Sandy Plains. She is an avid Bingo player and attends exercise class six days a week and is an experienced bidder at our Butter Bean auctions. She has always enjoyed her friends and especially her relationship with the amazing staff. It is a joy to have such a beautiful, kind, and thoughtful resident call Legacy Ridge at Sandy Plains home.

Join our Community Volunteer Team

If you want to make a huge difference in the lives of our amazing seniors at Sandy Plains, consider volunteering for a couple hours a week. We are looking for people to join our activity team as community volunteers. It’s a great way to get to know other family members, have fun, assist with meaningful events and activities, and spend time with your loved one.

Recipe Spotlight:

Cajun Muffaletta

Olive Salad Ingredients:

  • 1/4 cup black olives
  • 1/4 cup green olives
  • 1/4 cup pimentos
  • 1/4 cup capers
  • 1/4 cup cocktail onions
  • 1/4 cup chopped celery
  • 1 small can artichoke hearts
  • 1 tsps celery seed
  • 1tsps dried oregano
  • 1 tbsps chopped garlic
  • 1/2 cup olive oil
  • 2 tbsps red wine vinegar

Ingredients:

  • 1 loaf round Italian bread
  • 2 tbsps olive oil
  • 1/4 lb ham, thinly sliced
  • 1/4 lb Genoa salami, thinly sliced
  • 1/4 lb Provolone cheese, thinly sliced
  • 1/4 lb Mortadella (Italian Bologna), thinly sliced
  • 3 slices mozzarella cheese
  • 1 cup prepared olive salad (previously made)

METHOD:
In a food processor combine all Olive Salad Ingredients and chop coarsely, scrape into a bowl and set aside.

Split the bread lengthwise and drizzle the olive oil on each side. On bottom layer spread some of the above prepared olive salad and arrange with layers of thinly sliced meats and cheeses. Cover with top layer of the bread, cut and serve.
