April Associate of the Month Dasha Grimaldo

We are so thrilled to announce Dasha Grimaldo as our April Associate of the Month at Legacy Ridge at Sandy Plains. Dasha is a Certified Nursing Assistant (CNA) and has 13 years of experience in this field, the last seven years of which were at our community. Dasha is truly one of our night angels, as she works our third shift from 10:00 p.m. to 6:00 a.m. Caregiving has always been second nature to her even more so since becoming a mother. Challenges are inevitable she says, but when it comes to this profession, she advises newcomers to utilize empathy and patience. Dasha says that learning about mental health and seeking to understand others are keys to her success. At home, she has an active and happy 8-year-old son who loves to play soccer.

Dasha, congratulations on this well-deserved honor and for sharing such wonderful advice with all of us. We appreciate you and are grateful to you for making Legacy Ridge at Sandy Plains such a wonderful and caring community.

Good Day Sandy Plains Community, I’m getting excited as we look forward to a beautiful Spring season! I look forward to enjoying more outdoor activities with our residents which will allow them to plant new produce and flowers. I’m also excited about a new activity that I will be leading called “Chatting with Cindy”. I’m sure we will discover about each other.

Always know that my door is open to address any family’s concerns. I look forward to sharing our vibrant and caring community with your friends and family.

Support from Women On A Mission (WOM)

During the Shamrock Suprise Social residents each received several fun, tasty and useful treasures from the Women On A Mission group from Sandy Plains Baptist Church. It truly was like Christmas in March for our residents and smiles and good times were had by all our community residents. They were so appreciative of the generosity and kindness of the Women on a Mission Group from Sandy Plains Baptist Church

Suzanne Inomata

Suzanne Inomata April Associate of the Month

Legacy Ridge at Sandy Plains Proudly Presents Suzanne Inomata as our April Resident of the Month

Suzanne joined Legacy Ridge at Sandy Plains a few weeks ago and immediately established herself as a kind and thoughtful member of our community. She grew up in Richardson, Texas with two brothers and a father who had a PhD in Chemistry and a mother with a degree in Biology. When she was a young girl the family moved to Oak Ridge, Tennessee where her father worked on the Manhattan Project. They eventually moved back to Richardson, Texas where Suzanne was in the marching band in high school playing the clarinet. She went to college in Memphis, Tennessee. She met her husband, Yoshio when he was singing and playing the banjo in a traveling band while recruiting for a college in Memphis. They married after college. They initially lived in St. Louis and then moved to Pennsylvania. In Stroudsburg, Pennsylvania she raised two boys. She worked as a Park Ranger for the National Park Service at the Visitor Center in the Delaware Water Gap National Park. When her son, Tomio left for college, they moved to Tokyo, Japan near her husband’s family where they lived for nearly two years. They returned to the US and settled in Princeton Junction, New Jersey but after a retreat to Cape Cod, Massachusetts, they decided to move there to make it their retirement home. Suzanne lived there for 35 years before moving to Legacy Ridge at Sandy Plains. We are so happy that Suzanne has made our community her home. One of Suzanne’s many joys and talents is that she became a Master Gardner in Massachusetts, and we are looking forward to her helping us with our courtyard gardens at Sandy Plains.

We Love Families at Sandy Plains

We love it when families drop in to surprise their loved ones or dine in our dining room with a delicious meal prepared by our Chef Joe and his talented team or join us for some of our outstanding live entertainment or enjoy watching the sunset from one of our porches. We are looking forward to a fun and family friendly Spring at Sandy Plains.

Yosemite

Recipe Spotlight:

Spicy Fried Chicken Pasta

Ingredients:

6 pieces cold, spicy fried chicken
6 cups cooked rotini pasta
6 boiled eggs, yolks separated
1 cup mayonnaise
1 tbsp Creole mustard
1/4 cup minced onions
1/4 cup minced celery
1 tsp chopped garlic
1/4 cup minced red bell peppers
1/4 cup minced green bell peppers
1/4 cup sliced green onions
1/2 cup sweet pickle relish
salt and pepper to taste

Directions:
To make this dish, start by getting 6 pieces of spicy fried chicken from your favorite fast food outlet. I recommend Popeyes. Cut the bone-in chicken into cubes, keeping the skin intact. In a bowl, mash egg yolks, then add mayonnaise and Creole mustard, blending well. Dice egg whites and add them to the mixture. Combine all other ingredients except the chicken and pasta, ensuring they’re coated with the sauce. Add rotini pasta and gently mix, then add the fried chicken cubes. Season with salt and pepper to taste. Serve garnished with boiled eggs or additional pieces of hot fried chicken. Feel free to personalize the dish with your own seasoning blend. The key flavor comes from the seasoning on the chicken before frying.

When family members or residents refer a family to Legacy Ridge at Sandy Plains and they move into our community both the referring resident and the new resident receive a one-time $1,000 discount on their rent.
