Executive Director Corner
A Very Merry May to all of our friends, family, and residents! We continue to enjoy this spring weather with patio sitting, gardening club, walking club, and the fan-favorite – golf cart rides! We are excited to take our residents out for a spring picnic later this month at Lake McIntosh.
This month we will also host our annual Mother’s Day Tea on Friday, May 10, at 12:00 pm. Please RSVP with our concierge no later than May 6 . Each of our female residents is welcome to invite two guests to join them. Additionally, on Memorial Day we will host our beloved indoor cookout! There is quite a lot we have to look forward to and we hope to see you all here.
Resident of the Month
Barbara Starr
Congratulations to our May resident of the month: Barabra Starr. Barbara was born in Wilmington, North Carolina but has lived all over the Eastern US including Virginia, Philadelphia, and Michigan before moving to Virginia. Growing up, some of Barbara’s favorite memories include working in her father’s drug store, dusting for her mother every Friday (to this day she can’t stand dust), and going on “imaginary trips” with her friends and dolls. Barbara met her husband George in Philadelphia when they both started their first day of work at a local non-profit settlement house. She has two children: George, who lives here in Georgia, and Gabrielle, who lives in California. Barbara frequents almost all of our activities but some of her favorites include crafts, church, bible study, and socials. When she’s not participating in our fun events, Barbara can be found helping better the community by organizing the library, dusting, and helping to set up activities. She loves to be around and to help people. On the rare occasion Barbara feels more introverted, she can be found working on a puzzle or reading. We are grateful to have Barbara, her helpful spirit, and sweet smile. Barbara loves to share her wisdom; she says “I don’t know everything, but I’m happy to share what I do know”. She has two best pieces of advice to share: 1) Think before you speak, and 2) Never travel far from your religious beliefs because you must depend on the Lord to get you where you are going.

Recipe of the month:
Shepheard's Pie
Ingredients:
• 1 teaspoon salt, plus more to taste
• 3 large (1 1/2 to 2 pounds) potatoes , peeled and quartered
• 8 tablespoons (1 stick) butter, divided
• 1 medium onion, chopped (about 1 1/2 cups)
• 1 to 2 cups mixed vegetables, such as diced carrots, corn, or peas
• 1 1/2 pounds ground round beef
• 1/2 cup beef broth
• 1 teaspoon Worcestershire sauce
• Pepper and/or other seasonings of choice
Directions:
1. Boil the potatoes: Place the peeled and quartered potatoes in medium sized pot. Cover with at least an inch of cold water. Add a teaspoon of salt. Bring to a boil, reduce to a simmer, and cook until tender (about 20 minutes).
2. Preheat the oven to 400°F.
3. Sauté the vegetables: While the potatoes are cooking, melt 4 tablespoons of the butter in a large sauté pan on medium heat. Add the chopped onions and cook until tender, about 6 to 10 minutes.
If you are including vegetables, add them according to their cooking time. Carrots should be cooked with the onions, because they take as long to cook as the onions do. If you are including peas or corn, add them toward the end of the cooking of the onions, or after the meat starts to cook, as they take very little cooking time.
Associate of the Month
Lee Turcios
Our May associate of the month is Lee Turcios! Lee works as both our concierge and activities coordinator over the weekends. Lee grew up under the care of her grandmother in Honduras and moved to the US to live with her mother when her grandmother became ill. Lee is a jack of all trades. Her career path has been one of varying opportunities including working in law offices, for the Department of Social Service, and banking. When she and her family moved to Georgia from New York, Lee needed to find a job where she could work late hours, which led her into the CNA field. She worked as a CNA for 11 years before transferring over to activities and eventually finding her way over to our Legacy Ridge Family. Lee attests that she loves working here because everyone’s primary focus is on the resident and that the staff works together like an orchestra, well-run with teamwork and quality performance. Lee also cherishes working with our seniors as “there is always something to learn, and we have so much fun together”. We celebrated one year of Lee’s employment with us last month – which means one year of the most inventive crafts and beautiful DIY home décor you could ever think of! Lee’s talent for creativity is surely a blessing that we do not take for granted. In her free time, Lee enjoys exploring other countries’ cuisine through the art of cooking. Some of her favorite meals to cook include Pernil, Moro, and Sancocho. Lee gives everything 110% and is constantly going above and beyond what is asked of her. We are so thankful for all she does for us!
