Resident of the Month

Joann Parker

Joann was born at Grady Hospital in Atlanta, Ga. As an infant, her family moved to Louisiana where she resided until 2021. Joann attended LSU where she earned her master’s degree as a Microbiologist. She was a member of the Delta Gamma Sorority. She took Spanish and spent a month in Mexico doing a summer program. She worked for the LSU Veterinary Research Department for many years. She also worked as a Room “Nana” for 10 years for an inner city middle school where she read to the students, did arts & crafts with them amongst many other responsibilities. She has 2 daughters Cheryl and Charlene and 4 grandchildren. She was married to Roy Parker for 62 years. They owned an airplane and took many trips in it. She made regular visits to Colorado to ski and visit family. Joann is very involved in our activity program and on warm days, you’ll find her walking our community path with her friends or enjoying the view from the front porch. We appreciate her willingness to be involved in all aspects of our programming. We are thankful to have Joann as a part of our Legacy Ridge family.

Icelandic Vibes

Alexa, play “Don't be afraid, you have just got your eyes closed” from Múm

Finally We Are No One is the second studio album by Icelandic band Múm, the band composed the songs for the album Inside a lighthouse in the Westfjords, Galtarviti, one of the least populous and remote areas of Iceland.

The album was release in 2002, Mum is well known for the use of multiple instruments, all sort of strings, winds, percusions, flutes, choirs and uncommon instruments, their music is an intricate and whimsical soundscape that feels both intimate and otherworldly. The album captures the essence of untouched beauty and serene isolation, a timeless ode to the remote magic of Iceland.

January was a very exciting month for Legacy Ridge at Peachtree. We welcomed several new residents to the family. We have some news to share, LeeAnne Ryan, our Sales and Marketing Director, will now be head of Sales and Marketing at the new Assisted Living Community, The Canopy at Westridge in McDonough, Ga. Danielle Springer will be our new Sales and Marketing Director. 

Danielle graduated from Fayette County High School and lives in Sharpsburg, Ga. We are thrilled to welcome her to our team! Please stop by and say hello to her when you are in the building. Last month we started our campaign of Around The World with Atlas Senior Living and the residents enjoyed Brazil and now we’re on our next adventure to Iceland.

Around the World with Atlas

Iceland’s dramatic landscape is shaped by its active volcanism and vast glaciers. It is home to over 130 volcanoes, including Eyjafjallajökull, and Europe’s largest glacier, Vatnajökull.

During summer, Iceland experiences the Midnight Sun, with almost 24 hours of daylight. In contrast, winter brings long nights, creating the perfect setting for Northern Lights displays.

The Icelandic Horse

The horses of Iceland are the original Viking horses and one of the purest horse breeds in the world. The breed has been isolated on the rugged island in the North-Atlantic since the settlement, or over 1000 years ago, hardly any genetic input from other breeds if any at all.

As the first settlers came to Iceland they could only bring a limited number of livestock with them, and most probably chose their very best animals. Thus, it is very likely that the Icelandic horse has its origin in a herd of preselected, high quality individuals who had to survive the rough trip on a Viking longship across the Atlantic, before taking on their role as “the most indispensable servant” for the first Icelanders in this vast, wild, and entirely unknown country.

Recipe of the month:

Astarpungar- Love Balls

Ingredients:
• 2 eggs
• 75 gr. sugar
• 400 gr. flour
• 3 tsp. baking powder
• 1/4 tsp. salt
• 200ml milk
• 1 tsp. vanilla essence
• 1 tsp. lemon essence
• 1 tsp. cardamom essence (optional)
• 70 gr. raisins
• 1 ltr vegetable oil for frying

Directions:
Beat the sugar and eggs together until light, white and frothy. Combine and mix the dry ingredients. Then add the other wet ingredients; the milk and essences combine well.

Lastly, add in the egg/sugar mix and combine gently. Make small balls using teaspoons or an ice cream scoop and add to the vegetable oil (180°c / 356°F). Fry for a couple of minutes or until golden brown.

Associate of the Month

Tracy Davis

Tracy was born and raised in Cleveland, Ohio. She has lived in Ga. for 10 years now. She has 4 children. She is a Med Tech here at Legacy and works the overnight shift. She has been in the healthcare field for 29yrs and has worked in a variety of settings. She enjoys singing, dancing, and helping those in need. She is currently in school for health and human services and one day she aspires to be a licensed medical social worker. She has worked at Legacy Ridge for 2 and 1/2 yrs and she states that the residents have become a part of her family. Tracy is spoken of so highly by her Manager , Olga . Olga says when Tracy is at work, she knows things will run smoothly. Nathalie has worked alongside Tracy on many occasions and speaks her praises over and over. We are blessed to have her serving and loving on our residents here at Legacy Ridge. From the bottom of our hearts, we thank you Tracy for all that you do .

Iceland boasts the highest number of published authors per capita. The Icelandic tradition of gifting books during Christmas, known as Jólabókaflóð (Yule Book Flood), reflects their deep connection to storytelling and literature.
