Yosemite is home to a “firefall.” While it’s not actually fire, the Horsetail Fall on the eastern edge of El Capitan in the Yosemite Valley gives off the illusion of a fiery orange fall when the sunset hits at just the right angle for a few short weeks in February

Happy April! We hope you all are enjoying the spring weather, we sure are! With golf cart rides back in full swing and the garden club starting just around the corner, we simply can’t get enough of the sunshine!
While there are many activities to look forward to this month – as always – you may be missing a familiar face. 

Our Activities Director, Kelsey, will be out several weeks this month as she will be celebrating her wedding on April 13th! Our weekend Activities Coordinator and Concierge, Lee, will be filling in for activities while Kelsey is away. As you can see in the newsletter, our residents will continue to have a plethora of exciting activities and events to fill their springtime with fun!
In other news, we have added a fresh vegetable plate to our dining menu as another delicious and nutritious meal alternative!

Resident of the Month

Don Strahan

Don Strahan Resident of the Month

Don Strahan, our April resident of the month, is one of the kindest gentlemen you will ever meet. Don was born in Alabama, raised in Mississippi, and has since lived in South Florida, Arkansas, and Georgia. He says his favorite state of living was Florida – we aren’t sure if it’s because of the sunny weather or because he spent his free time there raising and showing Shetland Sheepdogs. After serving four years in the Navy, Don went to night school to study electronics and soon after found a passion for his aviation career. Don has one son who currently lives in Austin, Texas. Throughout his life, he has had to overcome various health challenges, but he always comes out on top. His secret is not hard to get behind: “Diet and exercise are essential to good health”. We are incredibly inspired by Don’s relentlessly positive attitude. In fact, when he lived in Arkansas, Don graduated from Rock Steady Boxing, and he attributes much of his growth to these wonderful exercise classes. While he has not found a Rock Steady Boxing class in Peachtree City, Don religiously attends our daily exercise classes at Legacy Ridge at Peachtree. In his free time, Don enjoys spending time with his friends who also live in this area and finding ways to help others. He recently joined us on our outing to Bloom Donation Center to help sort diapers for mothers and children in need. Don thoroughly enjoys living at Legacy Ridge at Peachtree because “everyone here is so nice and helpful, and there is a tremendous amount of activities”. His best advice is as follows: “Be helpful to everyone you meet”. It is safe to say that Don truly practices what he preaches, and we are so grateful to have him as a part of our family here at Legacy Ridge at Peachtree.

Jazmin Volunteer Spotlight

In a culture that boosts and promotes productivity, the young and old share a different rhythm. Both age groups naturally focus on the power and simplicity of just being, connecting with the essence of living. This realization came to Jazmin in 2019 when performing ballet dances for a senior residence in her hometown of Córdoba, Argentina, and then again in November of 2022, when living far away from her grandparents led her to decide to start the first GlamourGals chapter in the state of Georgia. GlamourGals is a national organization that has established over 100 chapters across America, with the common purpose of ending elder isolation across senior homes. This system allows student volunteers to gain leadership experience while brightening the lives of many senior residents through intergenerational connections. There is a funny correlation that occurs when those who have yet to see the world connect with those who have lived through most of it. Jazmin was born in Buenos Aires, Argentina in 2006. Although she is currently a senior in high school attending The Forest School in Fayetteville, she has lived in three different countries and has been enrolled in nine different schools both inside and outside of the USA. With her passion for learning and volunteer advocacy, she hopes to leave a positive mark in the world just like she has at Legacy Ridge. Jazmin will be attending the University of West Georgia Honors College Program.

Recipe of the month:

Reuben Sandwich

Reuben Sandwich

Ingredients:

• 1 loaf unseeded and unsliced good-quality rye bread, sliced 1-inch-thick (you’ll need 8 slices)
• 4 tablespoons butter
• 1-pound corned beef (or pastrami), sliced medium thick
• 1 cup sauerkraut
• 16 thin slices Swiss cheese
• About ¾ cup thousand islands

Instructions:

1. Heat a large nonstick or cast-iron pan over medium heat.
2. Spread one side of each slice of bread with butter, then flip over and spread 1½ tablespoons of Russian dressing evenly over the other side of each slice. Layer 4 slices of the bread with 2 slices of cheese, ¼ pound corned beef (or pastrami), 3 tablespoons sauerkraut (or coleslaw), and 2 more slices of cheese. Top with the other 4 slices of bread, buttered sides up.
3. Place 2 of the sandwiches in the skillet and cook, covered, until the first side is golden brown, and the cheese is starting to melt, 3 to 4 minutes.
4. Carefully flip the sandwiches and cook until the cheese is fully melted, and the bread is golden brown, 3 to 4 minutes more. (Reduce the heat a bit if you notice the bread is getting too browned before the cheese is fully melted.) keep warm. Repeat with the remaining two sandwiches. Let cool slightly, then slice the sandwiches in half and serve.

Janice Ausmus

Janice Ausmus Associate of the Month

Congratulations, Janice Ausmus, on being selected as our April Employee of the Month! Originally from the Philippines, Janice moved to the US with her husband in 2012. She was drawn to her career in senior living because of her close relationship with her parents and grandparents – her grandmother who lives in the Philippines is 100! In her free time, Janice enjoys cleaning, going to the gym, and traveling. She and her husband go caving every year! She also loves to watch crime series on Netflix. Some of her favorite shows include Fool Me Once, The Night Agent, Stranger Things, Arrow, American Assassin… and Bridgerton! A couple of her favorite actors include Jason Statham and Liam Neeson. Janice enjoys cooking Filipino dishes, especially Pansit Adobo. Her favorite part about Legacy Ridge at Peachtree is our friendly and kind staff and residents. We have a lot of favorite things about her too! Janice is always smiling, always willing to help, and always puts her best foot forward in everything she does. We are so happy and thankful to have her as a part of our family!
