Ruth Gichuhi

All the way from Kenya, East Africa, Ruth has been with us for eleven years!
As a young girl, Ruth cared for her grandmother. She always wanted to help others in need. This inspired her to enter a career in Caregiving.
Always laughing and smiling, it is obvious that Ruth loves what she does. She has a very positive attitude and is willing to help everyone. Ruth is also very gentle and loving to our residents.
In her spare time, Ruth enjoys spen- ding time with her three children and four grandchildren. She also loves dancing, which is clear, because many times you’ll catch her dancing with our residents!
Thank you, Ruth, for all your years of dedicated service!

We are so thankful for Happy Tails and “Hope” the Comfort dog, who routinely visit our residents. They give us comfort and care that only a dog can.

November Recipe Spotlight:
Sweet & salty rosted nuts

Ingredients:
1 egg white
1 tablespoon water
4 cups raw whole cashews, whole almonds, walnut halves, and/or pecan halves
3 tablespoons packed brown sugar
2 teaspoons chili powder
1 teaspoon garlic salt
1⁄8 teaspoon cayenne pepper
Directions:
Preheat oven to 300 degrees F. In a medium bowl, combine egg white and water; beat with a fork until frothy. Add nuts; toss to coat. Let stand for 5 minutes.
Meanwhile, in a large plastic bag, combine brown sugar, cumin, chili powder, garlic salt, and cayenne pepper. Add nuts; shake well to coat. Spread nuts evenly in a 15x10x1-inch baking pan.
Bake for 35 to 40 minutes or until nuts are toasted and coating is dry, stirring twice.
Transfer to a large sheet of foil. Cool completely. Store in an airtight container at room tempera- ture for up to 5 days, or freeze for up to 3 months.

Billy and Mary Nichols

Raised on North Georgia farms, this dynamic duo has been married sixty-sev- en years and have three wonderful children. And, Sheila, Scott and Shay have certainly inherited their parents’ fun personalities! One of the kids’ favorite memories are traveling across country in their pop-up camper. Another is singing with their parents as Billy Joe played his guitar- the same one Mary Sue gave him on their wedding day. With his own two hands, Billy Joe built additions to their home to accommodate the family. It was sure to have been an exciting household! Billy Joe and Mary Sue also held several positions at their church, sharing their love and helping others.
A US Navy Veteran, Billy Joe can play almost any musical instrument and he is very social. Joe worked as a mechanic and on the railroad before retiring. He also played guitar in his family’s traveling band. What’s more, he was a high school cheerleader and is very artistic.
At the age of sixteen, Mary Sue was a brave young girl and left North Georgia for the big city of Atlanta. She worked at the Woolworth 5 and Dime store on Peachtree, and eventually became the top producer at Rich’s (Macy’s) Depart- ment Store. She loves cooking, knitting, sewing, crafting, ceramics, and singing. She is also very kind and the life of the party!
Billy Joe and Mary Sue still hold hands every day- they are true love birds!
We are so happy that they are a part of our community!
