Recipe Spotlight:

Carrot Soup

Carrot Soup

Ingredients:
1 tablespoon butter
1 tablespoon extra-virgin olive oil
1 medium onion, chopped
1 stalk celery, chopped
2 cloves garlic, chopped
1 teaspoon fresh thyme or parsley, chopped
5 cups carrots, chopped
2 cups water
4 cups reduced-sodium chicken broth
1/2 cup half-and-half
1/2 teaspoon salt
Freshly ground black pepper, to taste

Instructions:
Heat butter and oil: In a Dutch oven over medium heat, melt the butter and oil together.
Sauté vegetables: Add the chopped onion and celery, and cook, stirring occasionally, for 4-6 minutes until softened.
Add garlic and herbs: Stir in the garlic and thyme, and cook for about 10 seconds until fragrant.
Cook the carrots: Add the chopped carrots, water, and chicken broth. Bring to a lively simmer and cook until the carrots are very tender, about 25 minutes.
Blend and finish: Once tender, blend the soup (either using an immersion blender or in batches with a regular blender) until smooth. Stir in the half-and-half, salt, and pepper to taste.
