What is Gluten?

Gluten refers to a group of proteins found naturally in certain grains—most commonly, wheat, barley and rye. These proteins provide structure and texture to foods, allowing bread to rise and providing a pleasant chewiness to pizza crust and pasta.

For most people, gluten is not harmful or unhealthy. But for those with a gluten sensitivity or intolerance, consuming the ingredient can result in a range of unpleasant symptoms, from headaches and skin irritations to fatigue and numerous digestive issues.

Celiac disease is the most severe form of gluten intolerance. People with this autoimmune disorder an develop anemia and other nutrient deficiencies if they continue to eat gluten. Those who don’t have celiac or a wheat allergy, yet still react negatively to gluten, are often diagnosed with gluten sensitivity. The label “gluten-free” or “GF” means that the food is safe for people with gluten intolerances. Many people following a gluten-free diet rely on naturally gluten-free foods for their nutritional needs.

Kaylee Paez!

Kaylee Paez, Sales Counselor, Wildcat Senior Living

Kaylee Paez is the new Sales Counselor at Wildcat! Kaylee has over 7 years of marketing and senior care experience combined. Kaylee earned a bachelor’s degree in public health from Charleston Southern University and a master’s degree in digital marketing communications from West Viriginia University. Kaylee is particularly drawn to the opportunity to be a part of the Wildcat team because of the commitment to provide compassionate care and enriching the lives of the residents. She also takes pride in the ability to provide personalized guidance to individuals and families as they navigate the transition to senior living communities.

Beyond Kaylee’s professional endeavors, her greatest joy comes from spending time with her wonderful family. Kaylee finds herself fortunate to have an amazing husband, a one-year-old daughter, and two fur babies (a Boxer and an English Bulldog) who inspire her every day. In addition to family time, Kaylee is passionate about college football and baking.

Kaylee is thrilled to be part of the Wildcat team where she looks forward to leveraging her skills and passion to contribute to our collective success. International Clean Hands Week and Practicing Good Hand Hygiene

The arrival of autumn signals the coming cold and flu season. Medical experts remind us that along with vaccinations, washing your hands frequently and properly can help prevent these illnesses. This simple hygienic habit is so important that the third week of September is designated as International Clean Hands Week.

Whether at home or out and about, people constantly encounter germs. You can pick up germs from touching various contaminated surfaces, and then unconsciously touch your face— especially your eyes, nose and mouth. Before you know it, you’re sick! Keeping your hands clean greatly reduces this risk and the risk of spreading germs to others.

Proper handwashing takes more than just a quick pass under the faucet. Lather your hands with soap, making sure to scrub well between fingers and under fingernails. Continue the process for 20 seconds, about the time it takes to hum the song “Happy Birthday to You” twice. Rinse hands well and dry.

A great way we like to help our residents keep clean hands is to promote hand hygiene and also to pamper everyone with manicures and hand therapy! Keep your eyes on our calendar to see when our “spa and manicure” days are! We also have hand therapy with Tracy from Your Health every Thursday at 10:30am in the Dining Room!

Recipe Spotlight:

Beignets & Berries

Beignets & Berries

Ingredients:

  • 1/4 cup butter, room temperature
  • 3/4 cup sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup plus 2 tablespoons warm water (120° to 130°), divided
  • 1/2 cup evaporated milk
  • 1 package (1/4 ounce) quick-rise yeast
  • 1 large egg
  • 3-1/4 to 3-3/4 cups all-purpose flour
  • Oil for deep-fat frying
  • Confectioners’ sugar
  • Berries and whipped topping, optional

Directions:
Beat butter, sugar, salt and cinnamon until crumbly. Beat in 1/2 cup water and evaporated milk. In another bowl, dissolve yeast in remaining 2 tablespoons water; add to milk mixture. Beat in egg until blended.

Add 2 cups flour; mix until well blended. Stir in enough remaining flour to form a soft dough (dough will be sticky). Place in a greased bowl, turning once to grease the top. Cover; refrigerate 4 hours or overnight.

Bring dough to room temperature. On a floured surface, roll dough into a 16×12-in. rectangle. Cut into 2-in. squares. In a deep cast-iron skillet or deep- fat fryer, heat oil to 375°. Drop beignets, a few at a time, into hot oil. Fry until golden brown, about 1 minute per side. Drain on paper towels. Dust with confectioners’ sugar. If desired, serve with assorted berries and whipped topping.

Ms. Barbara Owens is one of our assisted living residents who brings light and cheer to all she meets! Ms. Barbara was born in Fort, Myers Florida on September 29th, and was raised in Durham, North Carolina. Barbara was married in 1964 to Mr. Dixon Owens, and they were married for 55 years. Barbara and Dixon had a son Ira, and three grandchildren Noah, Jakob and Cailyn, and a lovable fur baby, Patches. Ms. Barbara was a model for the retail stores in Durham, NC, and she also sang chorus all throughout her school years. Ms. Barbara’s favorite food is pizza, and some of her favorite things to do were reading, gardening, caring for her family, home, and of course, her beloved Patches. You can always find Ms. Barbara around the concierge’s desk saying hello to all who walks by, we love our Ms. Barbara!

Natasha is one of our lead med techs and a caregiver. She is married and has three sons, three daughters, a granddaughter named Sweet Pea, and a heavenly grandson. Natasha loves spending time with her family. Originally from Anderson, South Carolina, she moved here two years ago. Natasha believes in teamwork and helping others. She loves Kit Kats, Sprites, and her Wildcat family.
