Elizabeth Trice

Elizabeth Trice hails from the Mid-West but was won over by the wonderful beaches in the south. Elizabeth has three great passions in her life, her children, singing, and caring for others. Elizabeth has four children, two boys and two girls and each one is the light of her life. Elizabeth has been singing since she was four years old and has been caring for others for over 35 years. Elizabeth believes that music can lift a spirit and soothe the soul and enjoys singing for all of the Wildcat residents.

Elizabeth Trice is a dedicated and compassionate Medication Technician at Wildcat Senior Living, and this month, she has been proudly selected as the Employee Spotlight of the Month. Elizabeth’s warm, patient demeanor and exceptional attention to detail have made her a beloved member of the team. Her passion for helping residents live comfortably and safely shines through in everything she does. Whether she’s administering medications, offering a reassuring word, or singing a resident’s favorite tune, Elizabeth consistently goes above and beyond to ensure that each resident feels cared for and valued. Her positive attitude, strong work ethic, and unwavering commitment to the Wildcat Senior Living community make her an invaluable asset to the team, and it’s no surprise that she has earned this well-deserved recognition.

Recipe Spotlight:

Traditional Scones

Ingredients:
1 Egg
2 heaped teaspoons – Baking Powder
25 grams – Caster Sugar
1 heaped teaspoon – Vanilla Sugar (or caster sugar)
25 grams – Vegetable Shortening (or lard)
500 grams – Plain Flour
1 teaspoon – Salt (fine)
50 grams – Butter (unsalted)
250 milliliters – Heavy Whipping Cream (or double cream)
250 milliliters – Full Cream Milk
1 tablespoon – Milk

Directions:
Preheat the oven to 220°C (430°F) and place a baking tray inside to warm. Mix flour, salt, sugar, and baking powder in a bowl. Add butter and lard (or shortening), blending until it resembles damp sand. Gradually add milk, mixing until the dough just comes together. Avoid overworking the dough.

Roll the dough on a floured surface to about 3 cm (1 inch) thick. Cut scones with a round cutter, reshaping the dough gently if needed. Place scones close together on a baking tray. Brush with egg wash (beaten egg and milk). Bake for 10-15 minutes until golden. Check doneness with a thermometer (center should reach 85°C/185°F). Serve warm or at room temperature with Chantilly cream and strawberry jam.

Chantilly Cream: Whisk cream and sugar until soft peaks form.

Resident of the Month

Bessie Huckabee

Bessie was brought into this world by a wonderful midwife on October the 12th ,1937 in Kershaw County Camden, South Carolina. Bessie has two brothers, a half-brother, and one sister whom she loves very much. Bessie’s family lives close by in Nexton and Summerville and has three great nephews that think of Bessie and her brother Jerry as Nanna and Poppa. You can find miss Bessie on any given day at the front desk here at Wildcat chitchatting with our other Wildcat friends.

Bessie was always a hard-working woman and started working at a Manhattan shirt factory in North Charleston, South Carolina in 1958. In 1960, Bessie then went to work for the Welfare Dept in the old Citadel building in 1965. Bessie’s office transferred to the Charleston Memorial hospital building from where she worked for 30 years. Bessie made many beloved friends and acquaintances during her career. Bessie retired from the Charleston Memorial hospital in September of 1990.

Ms. Bessie is a joy to all that meet her and has always been all about family and fun! She and her brother, Jerry, square danced and ballroom danced for over 30 years! Bessie also has a love for the arts and sports. She and her family held season tickets to most of the Broadway shows and major sporting events year-round. Another one of Bessie’s passions is her love of reading, where you can always find her nose in a book. When Bessie wasn’t dancing or spending time on Broadway or in a sports area, Bessie loved to wind down with a good cross stitch. Miss Bessie, being from the South, enjoys fried chicken as one of her favorite foods.

Like many people, Bessie’s’ favorite holiday is Christmas with all the twinkling lights, bows and ribbons, and presents galore as all of these things always bring the sound of family laughing while sharing this special time of year together. Bessie has been thoroughly enjoying her Wildcat family, playing bingo and having her family attend the wonderful Friends and Family events with her. We love our Miss Bessie and are so thankful to have gotten to know and love her over these past six months. Here’s to many more fun times and memories created with our lovely Miss Bessie and our Wildcat family and friends!
