My favorite part about being a resident at The Goldton is being able to play Bingo and enjoy great Chicken dinners. It’s nice to be able to form some close-knit relationships later in life since being a resident here.”

Discovering National Parks
Arches

This month in our discovering National Parks series we will be exploring Yosemite National Park in California. Yosemite was critical to the development of the concept of national parks. Galen Clark and others lobbied to protect Yosemite Valley from development, ultimately leading to President Abraham Lincoln’s signing of the Yosemite Grant of 1864 that declared Yosemite as federally preserved land. In 1890, John Muir led a successful movement to motivate Congress to establish Yosemite Valley and its surrounding areas as a National Park. This helped pave the way for the National Park System. At first glance, Yosemite’s natural wonders are easy to observe. Sights around the park are iconic in the human experience of national parks. Beyond the rocks, plants, and animals, is a story about people in Yosemite written on that very same landscape. It tells a story of different cultures (sometimes working together, sometimes in violent clashes) creating the place we call Yosemite National Park and defining how we experience it. Yosemite’s rich human history tells a story of conflict, dreams, diversity, hardships, adventures, and preservation of one of the first national parks.

Happy 100th Birthday

Last month our resident Mary B. celebrated her 100th birthday! Mary was born and raised in New York and moved to Florida for the warm and sunny weather! She says her secret to a long life is trusting God. She was married at the age of 22 to a wonderful man, Gasper. She had two children Ronald and Mary Lou. Mary prefers to stay in her room and watch the Catholic Church channel. She is very devoted to God and is always happy to have a visitor.

Dick Bierds Resident of the Month

Dick has lived here and Goldton just shy of two years! He was born in Brooklyn and raised in Queens. He is an Army Veteran with 30 months overseas in Germany. When he returned from Germany he moved to Florida, his parents were living here at that time. He got a job with the St. Petersburg Times. He was married to wonderful woman, Joan. Dick has two sons, two grandchildren and two great grandchildren. He is very friendly and has a great sense of humor! He enjoys playing watching baseball, bingo, sitting in the outdoor pavilion and happy hour.

Watermelon Peach Salad

Watermelon Peach Salad

Ingredients:

1 small seedless watermelon, cut into 1 inch cubes or melon balls
1 shallot, finely chopped
4 tablespoons torn mint plus extra for garnish
2 tablespoons olive oil
Kosher salt and freshly cracked black pepper to taste
1 sheet fresh feta cheese, cut into ½ cubes (about ½ cup once cubed)
2 yellow peaches, sliced
3 Persian cucumbers, sliced into ½ inch thick rounds
For the Vinaigrette
4 tablespoons olive oil
3 tablespoons red wine vinegar
3 cloves garlic, chopped
1 shallot, finely chopped
1 teaspoon dried oregano
Kosher salt and freshly cracked black pepper to taste

Directions:

Combine the watermelon, shallots, and mint in a large bowl with the olive oil. Season the mixture with salt and pepper and toss to combine. Transfer to a fridge and let marinate for at least 1 hour, up to 3 hours.
Remove from the fridge and add the sliced peaches, cubed feta, cucumbers and toss to combine. Transfer to a serving platter, drizzle with the vinaigrette and season with salt, pepper and extra mint.
In a small bowl whisk together the vinaigrette ingredients and drizzle over the salad. Season to taste, adjusting as needed.

Althea is our Associate of the Month! Althea is a caregiver/med tech here at the Goldton. She has been with us a short time but has made a big impact! She is very hard working, willing to pick up extra shifts and has a great rapport with the residents! Thanks for all you do Althea!
