Mammoth Cave

Discovering National Parks- Mammoth Cave

This month in our discovering national parks series we will be exploring Mammoth Cave our Kentucky National Park. In 1926, a group of private citizens formed Mammoth Cave National Park Association to protect the park. Mammoth Cave National Park was officially dedicated as a national park by 1941. It then became a World Heritage Site in 1981 and an International Biosphere Reserve in 1990. It has the world’s longest known cave system, with more than 400 miles explored, and one of the oldest tour attractions in North America.

Please join our many activities that will center around this astounding park! Don’t forget your passport to get stamped to earn a Mammoth Cave memento.

Embracing Compassionate Care

We recently had a wonderful donation from Senior Helpers, for our memory care, a specially designed baby doll which is used as a therapeutic aid with individuals Alzheimer’s and dementia.

Benefits of Baby Doll Therapy

*Promotes emotional well-being: Holding and caring for a baby doll can evoke feeling of purpose and joy, reducing anxiety and agitation in dementia patients.

*Stimulates memories and cognition: Engaging with a doll can trigger fond memories of parenthood or caregiving, fostering a sense of familiarity and peace.

*Encourages social interaction: It offers opportunities for interaction and conversation with caregivers and family, enhancing social skills.

*Provides a sense of purpose: Caring for the doll can give individuals a feeling of responsibility and purpose, improving their overall mood and quality of life.

February Recipe Spotlight

Double Chocolate Mocha Mousse

Double Chocolate Mocha Mousse

Ingredients:

4 oz. semisweet chocolate
2 oz. bittersweet chocolate
2 large egg yolks
1 1/2 tsp. instant espresso powder
5 tbsp. granulated sugar
1 1/2 c. heavy cream

Directions:

Step 1
Place the semisweet and bittersweet chocolates in a microwave-safe bowl. Melt according to package directions. Let cool slightly.
Step 2
Meanwhile, in a small saucepan, whisk together the egg yolks, espresso powder, 4 tablespoons granulated sugar, and 1/2 cup cream. Cook over medium heat, stirring constantly, until the mixture lightly coats the back of a spatula (do not let the mixture simmer or boil), 2 to 3 minutes.
Step 3
Scrape the egg mixture into the cooled chocolate and whisk to combine. Refrigerate until cooled, about 25 minutes.
Step 4
Using an electric mixer, beat together the remaining cup cream and tablespoon sugar in a medium bowl until stiff peaks form. In two additions, fold the whipped cream into the chocolate mixture. Divide among serving dishes and refrigerate for at least 20 minutes before serving.
Step 5
Sprinkle with shaved chocolate before serving, if desired.
