Kelly Park

This year our corporate office has started a national park campaign, and we get to watch clips and take trips to national parks for 2024. Our residents got to enjoy historic Kelly Park. The park is on 355 acres of land donated to the public park and wildlife preserve and bird sanctuary by Dr. Howard A. Kelly. Kelly Park spring maintains an average of 26,000 gallons per minute with constant temperature of 68 degrees. We are blessed that we get to enjoy the beauty of Florida year-round here at Madison of Clermont.

Inspirational Resident Stories: Easter

The residents have had so many people giving to them, but for Easter the Madison at Clermont residents wanted to give to others. After speaking among themselves, they decided that Cypress Ridge Elementary School second graders will get homemade paper Easter baskets. This project took a few weeks to complete, but they made more than 90 Easter baskets.

Lake County Supervisor of Elections

On February 12, 2024, the Supervisor of Elections office staff came out to host a supervised voting for our residents here at Madison at Clermont. Some of the residents had not registered but were able to do it on February 12th on the spot. They helped to make voting more convenient for seniors throughout Lake County. As we prepare for the primary election that will take place August 20, 2024, our residents will have the staff of the Supervisor of Elections office of Lake County back out to hold a second supervised voting opportunity before August 20th. Recipe Spotlight:

Spicy Fried Chicken Pasta

Ingredients:

6 pieces cold, spicy fried chicken
6 cups cooked rotini pasta
6 boiled eggs, yolks separated
1 cup mayonnaise
1 tbsp Creole mustard
1/4 cup minced onions
1/4 cup minced celery
1 tsp chopped garlic
1/4 cup minced red bell peppers
1/4 cup minced green bell peppers
1/4 cup sliced green onions
1/2 cup sweet pickle relish
salt and pepper to taste

Directions:
To make this dish, start by getting 6 pieces of spicy fried chicken from your favorite fast food outlet. I recommend Popeyes. Cut the bone-in chicken into cubes, keeping the skin intact. In a bowl, mash egg yolks, then add mayonnaise and Creole mustard, blending well. Dice egg whites and add them to the mixture. Combine all other ingredients except the chicken and pasta, ensuring they’re coated with the sauce. Add rotini pasta and gently mix, then add the fried chicken cubes. Season with salt and pepper to taste. Serve garnished with boiled eggs or additional pieces of hot fried chicken. Feel free to personalize the dish with your own seasoning blend. The key flavor comes from the seasoning on the chicken before frying.

Yosemite

Yosemite is home to a “firefall.” While it’s not actually fire, the Horsetail Fall on the eastern edge of El Capitan in the Yosemite Valley gives off the illusion of a fiery orange fall when the sunset hits at just the right angle for a few short weeks in February

Yosemite

Yosemite is famous for its giant sequoia trees; these trees can grow to be about 30 feet wide and more than 250 feet tall
