Atlas Exploring the National Parks

What makes the Smoky Mountains smokey? The mist is formed from the vapor given off by all the plants in the mountains. When the vapor is released, the molecules that make up the gas scatter blue light from the sky, giving the fog its blue color.

Clingmans Dome

At 6,643 feet, Clingmans Dome is the highest point in Great Smoky Mountains National Park & Tennessee. On clear days you can see over 100 miles in any direction. The highest peak in the park is easy to access for visitors of all ages and abilities and a must for any visit

Cades Cove

This beautiful misty mountain
valley is perhaps the most
popular spot in the park with its historic cabins, abundant wildlife, including black bears. The fall is the best time to visit providing excellent wildlife viewing opportunities and some of the best fall foliage found anywhere in the world.

Happy New Year to our Sandy Plains Families and Friends. I am a delighted to announce that we have hired a new Executive Director for Legacy Ridge at Sandy Plains. Her name is Cindy Brown, and she will be here on January 16th. I will personally be working with her as she gets started.

Music and Gifts Pre-school to Seniors

We were honored to have had so many amazing volunteer choirs, carolers and musicians perform all during the month of December for our residents. We had several churches bring elementary, middle, and high school students to perform holiday music, as well as choir members from local churches. Many brought cards that they made to give our residents and stayed to visit. We had an elementary class make cards for all our residents, each one a precious work of art.

One group of neighborhood carolers made their 8th year appearance regaling our residents with beautiful music. We had Cub Scout Pack 75 come and sing and give out gorgeous ornaments they made for our residents and treats for our staff. Our local high school, Sprayberry High School’s Music Honor Society brought talented students from the honor band, orchestra and choir to perform for us. They even brought a tuba, bells, and a cello to play. Our Chef Joe even got into the volunteer spirit by bringing his wife and daughters to work for a morning of volunteering and crafting. A very special thanks to Simpson Middle School for a school wide project with parents, staff and students to make a gift box for each of our residents, under our Christmas trees on Christmas morning. A heartfelt thank you to every one of our “Holiday Angels” for a beautiful and blessed December.

Resident of the Month

Marianne Woodruff

Marianne Woodruff, Resident of the Month January 2024 | Legacy Ridge at Sandy Plains

Congratulations to our January Resident of the Month Marianne Woodruff. Marianne was born and raised in New Jersey. She was married for 53 years and has four children, eight grandchildren and thirteen great grandchildren. She retired from the Insurance business in Warren, New Jersey. Marianne has traveled extensively in the United States and Europe.

Since moving to Georgia in 2008 she has developed lifelong friendships and a very socially active life. She is the consummate “social director” wherever she goes. She joined the Legacy Ridge family in July 2022. She loves playing cards, reading, playing Bingo and Mexican Train. She is also delighted to teach anyone a new game and share her card playing knowledge. Marianne is a core member of our daily exercise activity. In fact, exercising five days a week is not enough for her and she leads our Saturday exercise class for our residents. Many times, after we exercise, Marianne shares a few words of wisdom with the group, we call it meditations from Marianne. She always has a smile and kind words for everyone. Marianne we are so grateful that you call Legacy Ridge at Sandy Plains home!

Recipe Spotlight:

Stuffed Crown Roast Beef

Although this roast is mostly seen on holiday tables, it is excellent year-round either spit-roasted on a barbecue pit or roasted slow and low in the oven. I prefer bone-in for extraordinary flavor.

Ingredients:

1 (5-7 pound) bone-in beef rib roast
6 cloves garlic, chopped
2 cups green onions, sliced
1/8 tsp dried thyme
1/8 tsp dried basil
1 tsp salt
1/8 tsp black pepper
1/4 cup cayenne and jalapeno peppers, sliced
6-8 sprigs of rosemary
1/4 cup oil
2 cups onions, diced
1/4 cup celery, diced
1/4 cup bell pepper, diced
2 carrots, diced
1/4 cup parsley
Louisiana Gold Pepper Sauce

Instructions:

Pre-heat oven to 375 degrees F. In a small mixing bowl combine garlic, green onions, thyme, basil, salt and pepper. Pierce holes through the roast and fill each cavity with mixture. Follow with the peppers and rosemary, leaving approximately 1-inch of the rosemary exposed. (This will give flavor to the roast.) Season the roast completely with salt, pepper and Louisiana Gold. In a 12-quart cast iron Dutch oven, heat oil over medium-high heat. Sear roast in hot oil on both sides. Add onions, celery, bell pepper, carrots and parsley. Bake uncovered until tender, 25 minutes per pound for rare to medium-rare. Allow roast to rest 30 minutes prior to slicing.

As we look back at 2023 at Legacy Ridge at Sandy Plains, we want to thank our amazing residents who call our community home and to their fabulous families for being such valued partners with us and of course each one of our staff who are dedicated to your loved ones and making our community so vibrant, caring and warm.

This January we have so much to look forward to our new Executive Director, Cindy Brown will be joining our community. We are embarking on an exciting and educational year of engagement activities as we focus on a new national park each month. We will be kicking off January with a close look at the Smokey Mountains. Get ready for some great food, music and moonshine Sandy Plains style!

Marisol Vargas, Associate of the Month January 2024 | Legacy Ridge at Sandy Plains

Associate of the Month for January, Marisol Vargas. Congratulations to Marisol for starting 2024 as our January Associate of the Month. Marisol is a Cook in our community and is revered and appreciated by our Chef Joe and all the residents and staff at Legacy Ridge at Sandy Plains. She looks after all the residents and makes sure they have delicious and healthy meals. During our recent Family Holiday Dinner, she worked tirelessly to make sure it was a successful and wonderful dining experience for our residents. She is a joy to work with and a fabulous role model for teamwork. She is also quick to jump in and help wherever she is needed. Marisol thank you for being such a vital and integral part of our dining staff and exceptional role model for all of us at Legacy Ridge at Sandy Plains.
