Associate of the Month
Angelica Nieves
Angelica is our Associate of the month for February at Legacy Ridge at Sandy Plains. She earned it for so many reasons. She joined our community this past June and has made so many positive contributions for the well-being of our residents, as a Med Tech and Care Partner. She also has a gift for entertaining and engaging our residents in our SPIRIT/Memory Care neighborhood and for singing at mealtimes to the delight of our Assisted Living residents. She is flexible and has worked all three shifts at Sandy Plains. Angelica is a talented decorator and helped decorate our community during the holiday season including our activity bulletin boards. She even brought in some decorations from home to enhance our Christmas tree.
Angelica has thirty years of experience in Health Care. She started as a Home Health Aid in New Jersey. She moved to Georgia to care for her mother. Eventually she got married and she and her husband have 2 children, Angela, and Nicholas. They live in Marietta where she is only minutes away from Sandy Plains. She enjoys decorating, arts and crafts, cooking all types of food, and having a little time to herself.
She loves helping people, especially those who can no longer do things for themselves. Her advice to anyone starting out in this field is to be sympathetic with people, listen to them and be respectful. All great advice. One of Angelica’s secrets to her success is to always just do a little above and beyond. Thank you, Angelica, for your valued and extraordinary service at Legacy Ridge at Sandy Plains.

Resident of the Month
Ambrosio Cabrera
The day The Cabrera family came to visit Legacy Ridge at Sandy Plains to look for a home for their beloved husband, father, uncle, and grandfather was great day for our community. Ambrosio Cabrera is a New York City legend and icon, and honestly his life story could be a movie. When Ambrosio moved in this past October, we were thrilled.
Ambrosio was born in Aguadilla, Puerto Rico and came to live in NYC at the age of 14. When he was seventeen, he started work at the Café Caryle as a bus boy. He worked his way up to waiter, Captain and then was offered the prestigious position of Maître D’.
Seating the movers and shakers of politics, entertainment and the business world is no easy job. Some of these names include Jackie Kennedy, James Cagney, Paul Newman, and Betty Davis to name just a few. One of Ambrosio’s secrets to his success besides his grace, impeccable style and soft voice was to remember names, hundreds of them.
Ambrosio also served in the Korean War as a Sergeant as part of a Tank Battalion. He is married to his beautiful wife Carmen of 71 years and has eight children, 12 grandchildren and four great grandchildren. Thank you, Ambrosio, for gracing us with your presence every day and sharing your impeccable style with all of us at Legacy Ridge at Sandy Plains.

Recipe Spotlight:
Tuscan Shrimp Pasta
Ingredients:
3 dozen shrimp (21-25 count) peeled and deveined
2 lbs. pasta, cooked al dente
1/4 lb. butter
1 tbs. garlic, sliced
1/4 cup green onions, diced
1/4 cup mushrooms, sliced
1/4 cup red bell pepper, julienne
1/4 cup yellow bell pepper, julienne
1/4 cup green bell pepper, julienne
1/2 cup Creole tomatoes, diced
1/4 cup black olives, sliced
2 tbs. flour
1 oz. dry white wine
2 1/2 cups hot shellfish or chicken stock
1 tsp. lemon juice
1 tsp. parsley
salt and pepper, to taste
Directions:
In a heavy bottom sauté pan, melt butter over medium-high heat. Sauté garlic, green onions and mushrooms approximately 2 minutes or until mushrooms are slightly wilted. Add bell peppers, tomatoes and olives, stir into mixture and cook one additional minute. Add shrimp and stir fry into vegetables until shrimp begin to turn pink and curl, approximately 2 minutes. Sprinkle in flour and blend into dish until white roux is achieved. The flour will absorb most of the liquids in the pan and act as a thickening agent for the sauce. Deglaze with white wine and add hot stock, whisking well into seasoning mixture. Add lemon juice and parsley and season to taste using salt and pepper. Cook until sauce is thickened and shrimp are perfectly cooked, but not overdone. Additional chicken stock may be added should sauce become too thick. Serve over your favorite pasta.

Legacy Ridge at Sandy Plains kicked off a stellar January with an epic volunteer event on MLK Day with staff and families from Georgia Power. We had over 60 volunteers and their families join us for a morning of volunteering, fellowship, and fun. They started the morning by decorating and putting together a gift bag for each resident. They played Bingo, Balloon Volleyball, read to residents, played the piano, danced and visited with our residents. It was a joyous morning for all. We even had a wonderful Georgia Tech connection with one of our residents who is an alum meeting a family volunteer who is headed to Georgia Tech next year and his father who is also a Georgia Tech alum. We are so appreciative to Georgia Power for a thousand-watt experience!
Our local high school, Sprayberry High School’s Honor Society will be joining us monthly to play Bingo with our residents. We look forward to these young people visiting and getting to know our residents. Of course, we are so grateful to Sprayberry’s High School Music Honor Society for their memorable visit and concert at Sandy Plains last month.
