Volunteer Search at Sandy Plains

Volunteering is a great way to spend time with your loved one and to share your talents with our residents. We are looking to expand our volunteer program at Legacy Ridge at Sandy Plains. What a great way to start 2024 by volunteering at our community. Our Amazing Therapy Dog Luna

Thank you to Cornerstone Hospice for connecting us with Luna and her awesome owner, Carrie. Our residents look forward to Luna’s weekly visit in our Assisted Living and Spirit-Memory Care communities. She is truly the highlight of the week for so many. Luna is a beautiful golden retriever with a heart of gold. 

Thank you to both Luna and Carrie for making 2023 so memorable at Legacy Ridge at Sandy Plains.

Resident of the Month

Jean Halloway

Mildred "Jean" Halloway, Resident of the Month December 2023 | Legacy Ridge at Sandy Plains

Congratulations to Mildred “Jean” Holloway “Jean” Holloway, our resident of the month for December. One of the first things you will notice about her is her beautiful smile that she graciously passed on to her sons.Jean was born in Thomasville, Georgia and grew up in Boston, Georgia. She attended Georgia Baptist Nursing School.

Jean has four sons and has six grandchildren. According to Jean, she loved every minute of raising her sons. She also shared how proud she is of them and that they are a good bunch. Jean also enjoys keeping in touch with her sister, Angela, with weekly facetime chats.

One of her favorite jobs was home health and she did it for many years. Jean emphasized the importance of relating to the people you are taking care of and how important it was for the patients to have her attention. She always took time to get to know the people she cared for and to make it a positive experience, and to have a good time.

Jean has lived at Legacy Ridge at Sandy Plains for over two years. She enjoys craft projects, balloon volleyball, exercising, poetry workshops and a special dog named Luna. Jean also likes cats, westerns, and Hallmark movies. Thank you for enriching our lives here at Legacy Ridge at Sandy Plains.

December Recipe Spotlight

"Cheesy" Scalloped Potatoes

Ingredients:

For 2 servings
4 medium yukon gold potatoes, peeled 2 tablespoons vegan butter
2 garlics, minced
2 tablespoons all-purpose flour
2 cups non-dairy milk(480 mL)
1 1⁄2 cups low sodium vegetable broth(360 mL) 1 teaspoon salt
1⁄2 teaspoon pepper
1⁄3 cup nutritional yeast(20 g)
1⁄2 medium yellow onion, sliced into rings
fresh parsley, chopped, to garnish

Directions:

1. Preheat the oven to 400°F (200°C).
2. Thinly slice the potatoes into rounds about 1⁄8-inch (3 mm) thick. Submerge in a large bowl of water to keep from browning and set aside.
3. In a medium pot over low heat, melt the butter. Once the butter begins to foam, add the garlic and cook for 2-3 minutes, until fragrant. Add the flour and stir until flour and butter resemble the consistency of wet sand, creating a roux.
4. While stirring continuously, add the non-dairy milk, vegetable broth, salt, and pepper and bring to a boil. Stir in the nutritional yeast and continue to cook for 2-3 minutes, or until the sauce thick- ens. Remove from the heat.
5. In a medium baking dish, add 2 layers of the sliced potatoes, followed by a layer of the sliced onions. Pour on half of the cheese sauce and spread with a spatula to coat all of the potatoes and onions. Add another 2 layers of potatoes and pour on the remaining cheese sauce.
6. Cover with a lid or foil and bake for 1 hour. Then, uncover and bake for 10-15 minutes more, until the top is golden and bubbling and the pota- toes are tender.
7. Garnish with parsley and serve warm.

Associate of the Month

Ashley Harris

Ashley Harris, Associate of the Month December 2023 | Legacy Ridge at Sandy Plains

Congratulations to our December Associate of the Month, Ashley Harris. She joined our care team this summer at Legacy Ridge at Sandy Plains as a Med Tech. Ashley immediately impressed us with her amazing compassion, expertise, and care for our residents. She was a traveling CNA for many years before joining the Sandy Plains team. She also worked during COVID in hospital emergency rooms and that experience has prepared her for quick action and solid decision making as a med tech in our community.

Ashley is originally from Waycross, Georgia and graduated from Wave County High School. She has a daughter, 12 and a son, 8. She loves self-care activities, candle shopping and her absolute favorite candle is Strawberry Pound Cake.

She has many other interests including getting a real estate license and going to school for Cosmetology. One life goal for Ashley is to build a neighborhood and help families own property.

 

Ashley considers herself an advocate for our residents in providing care for them and a sincere desire to make a difference in their lives every single day. We appreciate you Ashley and we applaud your tremendous service to our Legacy Ridge and Sandy Plains community.
