Winter Vegetable Stew
As we welcome the new year, it’s a great time to focus on nourishing and warming meals. This Winter Vegetable Stew is perfect for January, offering a comforting and nutritious option for you to cook in your apartment. Welcome the new year with this heartwarming, nutritious stew, perfect for chilly January days.
Ingredients:
2 tbsp olive oil
1 onion, chopped
2 garlic cloves, minced
2 carrots, diced
2 celery stalks, diced
1 sweet potato, cubed
1 parsnip, cubed
1 turnip, cubed
1/2 cup pearl barley
1 can (14.5 oz) diced tomatoes
4 cups vegetable broth
1 tsp dried thyme
1 tsp dried rosemary
Salt and pepper
2 cups kale, chopped
Parsley for garnish
Directions:
Sauté Vegetables: In a pot, heat olive oil. Add onion and garlic, cook until soft. Add carrots, celery, sweet potato, parsnip, and turnip, cook 5 minutes.
Add Barley & Tomatoes: Stir in barley and tomatoes.
Simmer: Pour in broth, add thyme and rosemary. Season with salt and pepper. Bring to boil, then simmer for 30 minutes.
Add Greens: Stir in kale, cook until wilted.
Serve: Garnish with parsley.
This stew is rich in nutrients, making it a perfect meal for seniors to enjoy during the winter months.
