Alexa, play "Joga" from Björk’s album “Homogenic”
Homogenic is the third studio album by Icelandic recording artist Björk. It was released on 1997 by her own label One Little Indian Records.
Björk has consistently pushed musical boundaries, blending genres like electronic, classical, and avant-garde. Her music, art, influence and carisma have resonated far beyond Iceland, making her an international symbol of creativity and individuality.

Cathy Baker
Cathy has been with Legacy Reserve for over a year now and has been a true inspiration and role model for all those who have been blessed to be around her. Cathy is an integral part of dining services. She consistently goes above and beyond for the residents and staff at Legacy Reserve. When Cathy isn’t busy prepping food, she will go to the memory care unit and spend time with the amazing people who live there. Cathy will walk the dining room and bistro to check on service and make certain that residents are enjoying their meal. Thank you Cathy for always being an amazing person and an exceptional employee.
Super Bowl Sunday!
The Super Bowl started because the NFL and the AFL were two different football leagues in the 1960s. They decided to play a big championship game at the end of the season to see which league was better. The first Super Bowl was played in 1967, and it was called the “AFL-NFL World Championship Game.” The NFL won that first game. After that, they decided to make it an annual tradition, and it became the Super Bowl we know today. We will have Pizza in the bar on super bowl Sunday to celebrate that and national pizza day being the same day!

Iceland’s dramatic landscape is shaped by its active volcanism and vast glaciers. It is home to over 130 volcanoes, including Eyjafjallajökull, and Europe’s largest glacier, Vatnajökull.
During summer, Iceland experiences the Midnight Sun, with almost 24 hours of daylight. In contrast, winter brings long nights, creating the perfect setting for Northern Lights displays.
Iceland Lights Festival
The Iceland Lights Festival is a fun event in Reykjavik, Iceland, February 6-9th, where people celebrate winter with lots of colorful lights. It’s like a big outdoor light show, with buildings, streets, and parks getting decorated in bright, creative lights. The festival also has art displays, music, and performances. It’s a way to brighten up the dark winter months and bring some cheer to the city!
Icelandic Horses
Icelandic horses are a special type of horse from Iceland. They’re smaller than regular horses, but really strong and tough because they’ve lived in cold, tough conditions for a long time. They have a thick, furry coat to keep warm. They’re known for being friendly and easy to ride, and they can do a unique type of trot called the “tölt,” which is really smooth and fun.

Recipes of the Month
Rotel Dip!
Who doesn’t love a good dip while watching football? This month’s recipe will be rotel dip!
Ingredients:
– Ground beef or Sausage
-Velveta Block
– Rotel Tomatoes
Instructions:
Brown meat on the stovetop and drain. Add tomatoes and cheese to the same pan. Stir until melted and enjoy with your favorite chip!
Kjötsúpa: Icelandic Lamb Soup
Ingredients:
2 tablespoons olive oil
1 teaspoon finely chopped garlic
3 pounds bone-in lamb shoulder or thick chops
1 medium onion, sliced
1/3 cup brown rice, or rolled oats
6 cups water
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
1/2 head cabbage, coarsely chopped
3 medium carrots, 1/2-inch dice
1/2 cup diced rutabaga
1 cup cauliflower florets, optional
4 medium potatoes, 1/2-inch dice
Salt, to taste
Freshly ground black pepper, to taste
Directions:
Heat olive oil in a large pot over medium heat. Sauté garlic for 1–2 minutes without browning. Add lamb and brown on all sides.
Stir in onion, sauté briefly, then add rice and water. Bring to a boil, skimming off froth, and boil for 5 minutes.
Reduce heat to medium, add thyme and oregano, cover, and simmer for 40 minutes.
Add cabbage, carrots, rutabaga, cauliflower (if using), and potatoes. Cook for 20 minutes until vegetables are tender.
Remove meat, chop coarsely, and return to the pot. Simmer for 5 minutes.
Season with salt and pepper, serve, and enjoy!
