Quinoa and Roasted Vegetable Salad

Quinoa and Roasted Vegetable Salad

Ingredients:

1 cup quinoa
2 cups water
1 bell pepper, diced
1 small zucchini, chopped
1 carrot, sliced1 red onion, chopped2 tbsp olive oilSalt and pepper to taste2 tbsp lemon juice1 garlic clove, minced1/4 cup chopped fresh parsley

Instructions:

Preheat oven to 400°F (200°C).Rinse quinoa under cold water. In a saucepan, bring quinoa and water to a boil. Reduce heat, cover, and simmer for 15 minutes.Spread bell pepper, zucchini, carrot, and onion on a baking sheet. Drizzle with 1 tbsp olive oil and season with salt and pepper. Roast for 20 minutes.In a small bowl, whisk together lemon juice, garlic, and 1 tbsp olive oil.Fluff quinoa with a fork and combine with roasted vegetables in a large bowl.Pour dressing over salad and toss. Garnish with parsley.This salad offers a perfect blend of proteins, vitamins, and healthy fats, making it an ideal choice for a nutritious meal. It’s also versatile, so feel free to add or swap ingredients based on dietary needs or preferences!
