Recipe Spotlight:

Grilled Honey-Chipotle Salmon Foil Packets

Grilled Honey-Chipotle Salmon

Ingredients:
4 Tbsp butter
2 Tbsp honey
1Tbsp chipotle chili powder
3 cloves garlic
4 skin salmon
1 medium zucchini
1 summer squash
1 small red onion
1/4packed basil leaves

Directions:
Preheat grill to medium-high heat. In a small bowl, mix butter, honey, chipotle chili powder, and garlic.

Place each salmon fillet on a piece of foil. Divide zucchini, summer squash, and red onion among the packets.

Drizzle butter mixture over salmon and veggies. Top with basil leaves. Fold foil to seal packets. Grill packets for 12-15 minutes or until salmon is cooked through.
Serve hot.
