Sweet and Tangy Chicken Burgers

Sweet and Tangy Chicken Burgers

Ingredients:
2 teaspoons extra-virgin olive oil
1 large onion, finely chopped
1 teaspoon ground cinnamon
1 teaspoon ground coriander
1/4 teaspoon red pepper flakes
1 1/2 teaspoons kosher salt
Freshly ground black pepper
2 cloves garlic, minced
1/4 cup chopped flat-leaf parsley
1 pound ground lean chicken
1/4 cup plain yogurt
3 tablespoons pomegranate molasses, for brushing (see Cook’s Note)
Fixings:
4 whole wheat buns, toasted
1 tomato, thinly sliced
1 English cucumber, thinly sliced
1 small red onion, sliced
Lettuce

Directions:
Let salmon sit at room temperature for 10 minutes.
Whisk lemon juice, 2 tbsp olive oil, and 1/4 tsp salt in a bowl. Toss with kale and let stand for 10 minutes.
Add sliced dates, apple matchsticks, cheese, and almonds to kale. Season with pepper and toss well.
Season salmon with 1/2 tsp salt and pepper. Heat 1 tbsp olive oil in a skillet over medium-high heat. Cook salmon, skin-side up, for 4 minutes. Flip and cook for 3 minutes more.
Serve salmon with salad and rolls.
