Designated a national monument in 1908; President Woodrow Wilson made Grand Canyon a national park to protect the land and the resources within it in 1919.

National Chopstick Day

The National Chopsticks Day, observed on 6 February, is a celebration of the ancient tool that has become a staple in Asian dining and captivated people worldwide. Welcome to March! I can’t believe we are already 3 months into the new year! March brings us St Patty’s Day and Easter. Our National Park we are highlighting is The Grand Canyon. Be on the lookout for Grand Canyon specific activities. I look forward to a fantastic month of faith, fun, and reminiscing.

Mardi Gras

This past month we celebrated Mardi Gras. The residents enjoyed decorating mask and dressing up for our parade.

Mardi is the French word for Tuesday, and gras means “fat.” In France, the day before Ash Wednesday came to be known as Mardi Gras, or “Fat Tuesday.”

Satisfying that sweet tooth

This past month our residents enjoyed making candy to satisfy that sweet tooth that we all have. Believe it or not there is a reason why seniors crave sugar more now than ever.

Many of us have heard that as we age our taste buds disappear, however, the “sweet buds” remain the strongest over time which leads to a heightened desire for more sweets. By the age of 70 we have lost 2 out of 3 of our 10–15K taste buds and many seniors also have a dry mouth, which adds to craving sweets.

And did you know, that studies show that dementia attacks the area of the brain-prefrontal-cortex responsible for self-restraint in food choices? This leads to choosing the instant gratification of having something sweet or sugary instead of healthy foods.

The Grand Canyon was formed over millions of years as the Colorado River and its tributaries carved their way through layers of rock, creating a canyon that is over a mile deep and up to 18 miles wide in some places.

February Recipe Spotlight:

Lemon Chicken-Orzo Soup

Lemon Chicken-Orzo Soup

Ingredients:

3 tbsp. olive oil4 medium carrots, thinly sliced3 celery stalks, cut into small pieces2 leeks, halved lengthwise and sliced into half moons (white and light green parts only)1/4 tsp. kosher salt, plus more to taste1 tbsp. fresh thyme, chopped4 wide strips lemon zest, plus 1⁄4 cup lemon juice2 bay leaves4 bone-in, skin-on chicken breasts (about 3 pounds)2 qt. quarts low-sodium chicken broth1 c. orzo1/4 c. fresh dill, chopped

Directions:

1Heat the olive oil in a medium dutch oven over medium heat. Add the carrots, celery and leeks and sprinkle with the salt. Cook, stirring occasionally, until the leeks soften, about 5 minutes.2Add the thyme, lemon zest, bay leaves and chicken to the pot. Pour in the broth and 2 cups water. Bring to a simmer and cook, uncovered, until the chicken is cooked through and tender, 20 to 25 minutes.3Remove the chicken to a cutting board and let cool slightly. Shred or cut the meat into bite-size pieces and discard the skin and bones.4Return the soup to a simmer and add the orzo. Cook until the orzo is just tender, 8 to 10 minutes, returning the chicken to the pot in the last few minutes to heat through. Remove the soup from the heat and discard the lemon zest and bay leaves. Season with salt to taste. Stir in the lemon juice and dill.

Cindy Castaner is our employee of the month for March! Cindy was born in Puerto Rico and moved the Connecticut when she was 14 years old. Cindy has 2 children and 3 grandkids. Cindy has been a part of our team here at the Madison for almost 4 years. In her free time, she loves going to the beach and she loves to dance. You can always find Cindy dancing and putting smiles on our residents’ faces. She is such a joy to be around, and you can tell she loves each and every one of the residents here at Madison at Ocoee.

Carol McGowen

Carol McGowen Resident of the Month

Carol is our March resident of the Month. She was born August 1946 in Middletown, NY. She has 1 daughter and 1 granddaughter. She attended college and after college she became a telephone sales rep. She loved being in sales. In her free time, she is always around helping other residents and making sure they are taking care of. Growing up she 1 of 8 children, 6 girls and 2 boys. She has always helped in taking care of her family. Carol is such a joy to be around, and we love being part of her family.
