This month we explored Hawaii Volcanoes National Park. Our residents enjoyed learning about the volcanoes and loved immersing themselves in all things Hawaiian. We enjoyed a Polynesian dance class, the Elvis film, Blue Hawaii alongside a few Hawaiian treats, and we closed the month with a luau!

Rocky Mountain National Park’s 415 square miles (265,807 acres) encompasses a spectacular range of mountain environments. From meadows found in the montane life zone to glistening alpine lakes and up to the towering mountain peaks, there is something for everyone to discover.

Charles (Chuck) Horne

Charles (Chuck) Horne, Resident of the Month, September 2024 | Legacy Reserve at old Town

Chuck was born in Augusta, GA. He was raised partially there and Washington, DC. He is a widower and father of 5 children. Chuck is a retired A & P mechanic, aircraft maintenance and consultant. He is a Vietnam combat veteran. Chuck has been a resident of Legacy Reserve for almost 3 years. He enjoyed playing semi pro football. His hobbies include photography, amateur radio, model railroading, and he is a movie buff. Nowadays you can find Chuck relaxing and enjoying everything that Legacy Reserve has to offer.

Healthy Apple Pancakes

Healthy Apple Pancakes

Healthy apple pancakes made right in the blender! These fluffy apple pancakes are made with oats, applesauce, a touch of maple syrup and cinnamon for the most delicious healthy breakfast.

Ingredients:
3/4 Unsweetened applesauce
2 eggs
1 and 1/2 cups Oats: instead of any flour in this pancake recipe you’ll just need some old fashioned rolled oats
1/4 Milk: feel free to use any milk you’d like
Maple Syrup
1 tsp Vanilla extract
2 tsp Baking powder
1/4 tsp of cinnamon, allspice, nutmeg and a pinch of salt
Olive oil or butter for cooking
Apple Topping:
3/4 cup diced apple
1 tablespoon butter
1 teaspoon pure maple syrup
a sprinkle of cinnamon

Directions:
Add all of the pancake ingredients to a blender and blend on high until completely smooth. Let the batter sit in your blender while you heat your pan up. If batter is too thick, you may need to add a few extra tablespoons of milk to the blender. Lightly coat a griddle with oil or butter and place over a medium heat. Once the pan is hot, add about 1/3 cup of the batter to the griddle for each pancake and cook for 2-4 minutes until pancakes slightly puff up and you see a few bubbles along the edges. Flip cakes and cook until golden brown on underside. Wipe skillet clean and repeat with more oil and remaining batter. Makes 6 pancakes total. Serves 3, 2 pancakes each. Add topping and ENJOY!

Barbara is a proud wife and mother of three and three bonus children. She is a loving G-Ma to eight grandchildren. She has worked at Legacy for almost two years. Barbara loves spending time with her family. In her free time, she enjoys baking. Barb as she is affectionately called, loves meeting new residents, and she is always willing and ready to give out hugs.
