Resident Bee of the Month

Pok San Perkins

Born near Seoul Korea in 1938 to Mr. & Mrs. Kim. She is one of seven sisters and 2 brothers. She grew up very close to her family. The youngest of her two brothers was a professional weightlifter and won a gold medal in the 1970 Asian Games. She met her husband, David Perkins, when he was stationed in Korea with the 304 Signal Battalion, and she was working as a waitress at the NCO Club. After they married, they moved several times as David was active-duty Army for over 23 years and was stationed in California, South Carolina, and Germany (two separate tours) before settling down in Columbus Georgia. Pok San and David have two children, Kimberly Smith, and Gene Perkins. They’re also blessed with several grandchildren and great grandchildren. She enjoys shopping, watching movies, eating out and spending time with her children and grandchildren. Her favorite color is red, favorite food is bulgogi and kimchi and her favorite movie of all time is Gone with The Wind. Pok San appreciates the Legacy team and being recognized as resident of the month.

Let the good times roll! We have had a blast celebrating Mardi Gras and Valentine’s Day. Our residents enjoyed a parade, special Mardi Gras dinner, and live music on Fat Tuesday. On Valentine’s Day love was in the air at our Sweetheart Soiree. A lovely meal was prepared by our fine dining team and residents took the floor to dance after dinner.

Recipe Spotlight:

Cajun Muffaletta

Olive Salad Ingredients:

  • 1/4 cup black olives
  • 1/4 cup green olives
  • 1/4 cup pimentos
  • 1/4 cup capers
  • 1/4 cup cocktail onions
  • 1/4 cup chopped celery
  • 1 small can artichoke hearts
  • 1 tsps celery seed
  • 1tsps dried oregano
  • 1 tbsps chopped garlic
  • 1/2 cup olive oil
  • 2 tbsps red wine vinegar

Ingredients:

  • 1 loaf round Italian bread
  • 2 tbsps olive oil
  • 1/4 lb ham, thinly sliced
  • 1/4 lb Genoa salami, thinly sliced
  • 1/4 lb Provolone cheese, thinly sliced
  • 1/4 lb Mortadella (Italian Bologna), thinly sliced
  • 3 slices mozzarella cheese
  • 1 cup prepared olive salad (previously made)

METHOD:
In a food processor combine all Olive Salad Ingredients and chop coarsely, scrape into a bowl and set aside.

Split the bread lengthwise and drizzle the olive oil on each side. On bottom layer spread some of the above prepared olive salad and arrange with layers of thinly sliced meats and cheeses. Cover with top layer of the bread, cut and serve.

Tiasha Dukes Associate of the Month

Tiasha describes herself as a phenomenal human being with a well-intentioned personality. We find her to be a hard worker and quite the team player. In her spare time, she loves to shop and travel. She says her greatest accomplishments is being a wife to her husband, a mother to her children and being a Glam mother to her beautiful grandchildren. Tiasha, thank you for being a part of our care staff here at Legacy and making a difference in our resident’s lives.

Grand Canyon

The Hopi Tribe considers the Grand Canyon a gateway to afterlife. There are over 1,000 caves within the park’s territory with only 335 being documented.

Designated a national monument in 1908; President Woodrow Wilson made Grand Canyon a national park to protect the land and the resources within it in 1919.
