Alexa play "The Ecstasy Of Gold" from "Ennio Morricone"

“The Ecstasy of Gold” (L’estasi dell’oro) is one of Ennio Morricone’s most celebrated compositions, featured in the climactic scene of The Good, the Bad and the Ugly (1966). It plays during the moment when Tuco (Eli Wallach) frantically runs through the Sad Hill Cemetery, desperately searching for the grave that holds the buried gold. The piece exemplifies Morricone’s genius, blending classical composition with unconventional sounds to create a piece that feels both cinematic and timeless.

Ghaith Ayyad

Ghaith has been with Legacy since 2022 and since then has played a huge role in all areas! He started out as a server in the kitchen, where he quickly became a lead server and helped lead dinner. From there Ghaith recently accepted the position as our transportation director, and has been thriving! Ghaith is loved by all residents and staff and we are so lucky to have him!

What is March Madness?

March Madness is a huge college basketball tournament that happens every year in the U.S. It’s called “March Madness” because it’s wild, exciting, and unpredictable, with lots of upsets.
Here’s how it works:
64 teams (from colleges across the country) get picked to play in the tournament.
These teams are split into 4 groups (called regions), and each group has 16 teams.
Teams play in a knockout style, meaning the loser of each game goes home and the winner moves on to the next round.
The rounds go like this: First round, second round, Sweet 16, Elite 8, Final Four, and then the championship game.
The goal is to win the final game and become national champions.

Mardi Gras

Mardi Gras is a big party before Lent, which is a time when some people give up things for 40 days. Mardi Gras happens in places like New Orleans, and it’s known for parades, costumes, beads, and a lot of fun. People throw beads from floats to the crowd, and some people wear crazy costumes or masks. It’s a time for eating, dancing, and celebrating before things get quieter for Lent. The name “Mardi Gras” means “Fat Tuesday” in French, which refers to eating all the rich food before giving things up.

Saint Patrick's Day!

Icelandic horses are a special type of horse from Iceland. They’re smaller than regular horses, but really strong and tough because they’ve lived in cold, tough conditions for a long time. They have a thick, furry coat to keep warm. They’re known for being friendly and easy to ride, and they can do a unique type of trot called the “tölt,” which is really smooth and fun.

Louisiana-Style Gumbo

Louisiana-Style Gumbo

Ingredients:
For the Roux:

1 cup all-purpose flour , heaping
2/3 cup oil (vegetable or canola oil)
For the Gumbo:
1 bunch celery , diced, leaves and all
1 green bell pepper , diced
1 large yellow onion , diced
1 bunch green onions , finely chopped
1 bunch fresh chopped parsley , finely chopped
2-3 cloves garlic
1-2 Tablespoons Cajun seasoning *
6-8 cups chicken broth *
12 ounce package andouille sausages , sliced into ‘coins’ (substitute Polska Kielbasa if you can’t find a good Andouille)
Meat from 1 Rotisserie Chicken*
2 cups Shrimp , pre cooked
hot cooked rice for serving

Instructions:
Make the Roux*: In a large, heavy bottom stock pot combine flour and oil. Cook on medium-low heat, stirring constantly for 30-45 minutes. This part takes patience–when it’s finished it should be as dark as chocolate and have a soft, “cookie dough” like consistency. Be careful not to let it burn! Feel free to add a little more flour or oil as needed to reach this consistency.
Brown the sausage. In a separate skillet on medium-high heat place the sausage slices in one layer in the pan. Brown them well on one side (2-3 minutes) and then use a fork to flip each over onto the other side to brown. Remove to a plate.
Cook the vegetables in broth. Add ½ cup of the chicken broth to the hot skillet that had the sausage to deglaze the pan. Pour the broth and drippings into your large soup pot.
Add remaining 5 ½ cups of chicken broth. Add veggies, parsley, garlic and roux to the pot and stir well.

Bring to a boil over medium heat and boil for 5-7 minutes, or until the vegetables are slightly tender. (Skim off any foam that may rise to the top of the pot.) Stir in cajun seasoning, to taste.
Add meat. Add chicken, sausage, and shrimp.
Taste and serve. At this point taste it and add more seasonings to your liking–salt, pepper, chicken bullion paste, garlic, more Joe’s stuff or more chicken broth–until you reach the perfect flavor. Serve warm over rice. (Tastes even better the next day!)

She has an infectious smile and brings joy to every resident and staff member that she comes in contact with! We are so greatful to have Carol here at Legacy!
