Greek Heritage
Around the World with Atlas

Greece, the cradle of Western civilization, is a land where ancient history, breathtaking landscapes, and vibrant culture come together. From the awe-inspiring ruins of the Acropolis of Athens, where the Parthenon stands as a symbol of classical Greece, to the mystical sanctuary of Delphi, once considered the center of the world in ancient times, Greece is rich in heritage and mystical past.

The whitewashed cliffs of Santorini showcase Mediterranean charm. Whether exploring ancient ruins, sun-drenched islands, or dramatic landscapes, Greece captivates with its timeless beauty and profound legacy.

History of Olympics in Athens

A long time ago, over 2,000 years back in ancient Greece, people started the Olympics as a way to honor their gods. Athletes from different areas came together to compete in sports like running, wrestling, and chariot racing. These games happened every four years. Many years later, in 1896, the Olympics started again as a worldwide event. Now, athletes from all over the world come together every four years to compete in many different sports and celebrate teamwork and peace.

Ancient Greeks

Alexander III of Macedon, most commonly known as “Alexander the Great”, was a king of the ancient Greek kingdom of Macedon. He succeeded his father Philip II to the throne in 336 BC at the age of 20, and spent most of his ruling years conducting a lengthy military campaign throughout Western Asia, Central Asia, parts of South Asia, and Egypt. By the age of 30, he had created one of the largest empires in history, stretching from Greece to northwestern India. He was undefeated in battle and is widely considered to be one of history’s greatest and most successful military commanders. Alexander had many tutors, the most known was Aristotle, who instruct a young Alexander into the ancient greek liberal arts and mastered at a very young age.

Recipes of the Month

Classic Hummus

Ingredients:
1 (15oz) can chickpeas, drained or 1 ½ cups (250g) cooked chickpeas
1/4 cup (60ml) fresh lemon juice, 1 large lemon
1/4 cup (60ml) well-stirred tahini, try our homemade tahini recipe
1 small garlic clove, minced
2 tablespoons (30ml) extra-virgin olive oil, plus more for serving
1/2 teaspoon ground cumin
Salt to taste
2 to 3 tablespoons (45ml) cold water
Dash ground paprika

Directions:
1. In the bowl of a food processor, combine the tahini and lemon juice and process for 1 minute. Scrape the sides and bottom of the bowl, then process for 30 seconds more. This extra time helps “whip” or “cream” the tahini, making the hummus smooth and creamy.
2. Add the olive oil, minced garlic, cumin, and a 1/2 teaspoon of salt to the whipped tahini and lemon juice. Process for 30 seconds, scrape the sides and bottom of the bowl, and then process for another 30 seconds or until well blended.
3. Drain the chickpeas. Then add half of the chickpeas to the food processor and process for 1 minute. Scrape the sides and bottom of the bowl, then add the remaining chickpeas and process them until thick and relatively smooth, 1 to 2 minutes.
4.The hummus will likely be too thick and still have tiny bits of chickpea. To fix this, slowly add 2 to 3 tablespoons of cold water or aquafaba with the food processor turned on until you reach the perfect consistency.
5.Taste and adjust as needed. Serve hummus with a drizzle of olive oil and a sprinkle of paprika, sumac, or Za’atar.
6.Store homemade hummus in an airtight container and refrigerate for up to one week. Freeze, covered with a thin layer of olive oil, for up to one month.
