Oatmeal Banana Muffins with Walnuts

Oatmeal Banana Muffins with Walnuts

Ingredients:

2 ripe bananas, mashed
1 cup rolled oats
3/4 cup whole wheat flour
1/2 cup milk (any kind)
1/4 cup honey or maple syrup
2 eggs
1/4 cup unsweetened applesauce
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp vanilla extract
1/2 tsp cinnamon
1/4 tsp salt
1/2 cup walnuts, chopped (plus extra for topping)

Instructions:

Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
In a large bowl, combine the mashed bananas, milk, honey, eggs, and applesauce. Mix until well combined.
In another bowl, mix together the rolled oats, whole wheat flour, baking powder, baking soda, cinnamon, and salt.
Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Fold in the chopped walnuts.
Fill each muffin cup about 3/4 full and sprinkle additional walnuts on top.
Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Enjoy these wholesome oatmeal banana muffins as a healthy treat or a nutritious breakfast option!
