Miguel Cohen

Miguel Cohen, Associate of the Month January 2024 | Madison at Ocoee

Miguel is from the tropical island of Jamaica. He moved to Georgia in 2018 and worked in the Hotel industry as chef. In 2019 Florida became is new home working in the panhandle as a chef for one of the hotel chains. Miguel decided to settle in the Orlando area in 2022. He has one brother and one sister. Miguel enjoys all sports football, soccer and basketball and his team is the Magic. He has joined our Dietary team and has a great attitude with the staff and residents.

Every month we will journey to that National park through documentaries, facts, food, games, site seeing and speakers. For the month of January our National park is The Great Smokey Mountains. I can’t wait to hear your stories about The Great Smokey Mountains. Lets have some fun.

January Recipe Spotlight:

Orange-Basil Vinaigrette

A refreshing and flavorful vinaigrette to use as a salad dressing or as a sauce over grilled fish.

Ingredients:

1 tbsp orange zest
1/4 cup orange juice
1/4 cup minced basil
2 cloves minced garlic
1/2 tsp ground ginger
salt and pepper to taste
1/2 cup extra virgin olive oil

Directions:

Combine all ingredients in a 1 pint mason jar. Screw lid on jar tightly and shake vigorously to incorporate all the ingredients. Adjust salt and pepper, if necessary. Use as a salad dressing or a sauce over grilled fish. This goes especially well on herb encrusted salmon salad with mixed baby greens.

Shirley Giles

She is from Pittsburgh, Pennsylvania. Shirley was married twice. Her late husband was Virgil Giles who she misses very much. She has three children, Bobby, Kim, and Blaz, six grandchildren and 11 great grandchildren. Shirley worked at Evan High School as a secretary. She enjoyed seeing the students every day. She loves her Football team the Steelers and enjoys watching the games. Shirley has traveled to many beautiful places and has always been a social butterfly. Thank you for picking our community.

At 6,643 feet, Clingmans Dome is the highest point in Great Smoky Mountains National Park & Tennessee. On clear days you can see over 100 miles in any direction. The highest peak in the park is easy to access for visitors of all ages and abilities and a must for any visit
