February Exploring the Mammoth Cave

Home to the longest Cave system in the world, more than 400 miles of underground passageways, located about 85 miles south of Louisville Kentucky, the oldest parts of Mammoth Cave are at least 10 million years old, and the temperature inside is about 54 degrees year round.

Unique underground formations, including stalactites, stalagmites, and gypsum formations.

Historical Significance:

Evidence suggests that Mammoth Cave has been used by humans for thousands of years. Native American artifacts discovered in the cave date back to around 4,000 years ago, highlighting its historical importance.

Mr. and Mrs. Al Blocker

Mr. and Mrs. Blocker Resident of the Month

The Blocker’s were married in 1961 in Maryland. Al and Carolyn have two sons, Virgil, and Al Jr. and three grandchildren. Al worked for the Postal service and a Taxi Business in the Maryland area.Carolyn was a secretary and worked at a hospital in D.C. Last year they moved to Florida to be close to family. The Blockers have been part of our Ocoee community for over a year. Al and Carolyn are very active at Madison with our Bible Study group.

February Recipe Spotlight:

Melty Chocolate-Truffle Cookies

Melty Chocolate-Truffle Cookies

Ingredients:

1/2 cup all-purpose flour1/2 cup sugar1/4 cup unsweetened Dutch-process cocoa powder1/2 tsp baking powder1/4 tsp salt1 tsp espresso powder (optional)2 tbsp unsalted butter, cut into pieces, room temperature1/3 cup (about 3 oz) chopped dark chocolate1 large egg1 tbsp vanilla extract1 cup powdered sugar

Directions:

Preheat oven to 375°F and line 2 baking sheets with parchment paper.

Combine flour, sugar, cocoa powder, baking powder, salt, and espresso powder (if using). Blend in butter until mixture resembles breadcrumbs. Add chocolate.

Whisk together egg and vanilla, then add to chocolate mixture; stir until slightly moistened. Form dough into a ball, wrap in plastic, and refrigerate for 30 minutes.

Shape dough into tablespoon-size balls, coat each with powdered sugar, and place 2″ apart on baking sheets. Bake for about 10 minutes until set but slightly undercooked. Cool on sheets for 5 minutes, then transfer to wire racks to cool completely. Serve warm.

Scarlotta Woolford - Associate of the Month

She is from Guyana and moved to Florida in 2028. Scarlotta is married to her husband Yone and they have one son Yone Jr. She worked at a local Day Care in Orlando, before becoming a C.N.A. and our team. Scarlotta enjoys spending quality time with her family visiting local attractions. She always has a smile for everyone she meets and takes pride in her work here at Ocoee. Thank you for being part of our Madison at Ocoee family.
