Cinco De Mayo

If you haven’t partied with Madison at Clermont residents, you haven’t been to a real party! We had our Cinco De Mayo celebrations with some of our sponsors and with some great drinks. Residents got to plant May flowers for the spring. The food was provided by our very own Food Director, Chef Ashely Taylor. What she presented gave us the full Mexican cuisine experience. If you haven’t had any of Chef Ashely’s cooking, you are missing out. Plan a day with one of your family members here at Madison At Clermont and dine with us. As a family member you should make a reservation by calling the concierge desk at least 24 hours in advance.

Beautiful Ladies

There is nothing like a mother’s love. We got to celebrate the mothers of Madison at Clermont. Our Mother’s Day High Tea was full of beautiful ladies dressed in there Sunday’s best. Many of our family members joined their mother along with many of the gentlemen from Madison at Clermont. The Mother’s Day High Tea had great music, desserts and tea.

FL State Parks

There are 175 state parks and 9 state trails in the U.S. state of Florida which encompass more than 800,000 acres (320,000 ha)

Zoo Day

Many of us haven’t been to the zoo in years and this past month we got to see some of our favorite animals. The Central Florida Zoo in Sanford, FL had lots to offer. Animals bring so much joy to our lives and seeing some of the most beautiful and exotic animals at the zoo was fantastic. Lions, tigers, and bears oh my!

Bass Pro Shop

There’s nothing like a little shopping. If you love going outdoors and fishing, Bass Pro Shop is the place for you. During our trip we got to see the latest outdoor equipment. As the residents walked through the store, they got to see the large fish aquarium and newest boats as they enjoyed the beautiful atmosphere. The residents picked up some fun things as they shopped at the Bass Pro Shop.

Lake Louisa State Park

Lake Louisa State Park its a natural theme park that showcases a diversity of wildlife, including deer, bobcat, gopher tortoises, fox squirrel and flighted creatures like bald eagles and osprey.

Recipe Spotlight:

Mixed Berry Spinach Salad With Strawberry Balsamic Vinaigrette Dressing

Ingredients:
5 ounces Baby Spinach
1 cup Strawberry (sliced)
½ cup Blueberry
½ Red Onion (thinly sliced)
1 Sweet Apple (cored, halved and thinly sliced)
1 cup Candied Walnuts (chopped)
1 cup Strawberry
¼ cup Balsamic Vinegar
¼ cup Extra Virgin Olive Oil
1 tablespoon Dijon Mustard
1 tablespoon Honey
1 clove Garlic (minced)
¼ teaspoon Salt
¼ teaspoon Pepper
â…” cup Feta Cheese (as desired)

Directions:
For the dressing, push a straw through the strawberries from the tip to the green top to remove the hull. (Or you can cut it off with a knife!) Add the rest of the dressing ingredients. Blend until smooth. Refrigerate. Cut strawberries, apple, and onion into slices.
Combine all the salad ingredients in a large bowl. Drizzle with desired amount of dressing and toss to coat. (Spinach wilts easily, don’t add dressing until ready to eat!) Sprinkle feta cheese on top and serve.
