Resident of the Month
Mathias Schneider
Our Resident of the Month is Mathias Schneider. Better known as Matt! He has been with Madison at Clermont for a little over a year. Mr. Schneider loves Chicago sports being that he spent a lot of time in the city. His favorite sports team is The Blackhawks Hockey Team.
Day Trips
Look who’s on the town this month. This month we were all over Central Florida. The residents got to enjoy outings to local parks, the Clermont Veterans Parade and a trip to the Orange County History Museum. You never know where we may go next. Next month we plan on enjoying many of the local events and holiday activities throughout Central Florida. Be on the lookout for the residents at Madison at Clermont, we just may be at your next event!

November Recipe Spotlight:
Creamy Tuscan Chicken
Ingredients:
4 bone-in, skin-on chicken thighs
2 teaspoons salt, for the chicken
1 teaspoon pepper, for the chicken
1 tablespoon oil
3 cloves garlic, chopped
½ onion, diced
1 tomato, diced
2 cups spinach(80 g)
2 cups heavy cream(480 mL)
1 teaspoon salt
1 teaspoon pepper
½ cup grated parmesan cheese(55 g)
2 tablespoons fresh flat-leaf parsley, chopped
Directions:
Season chicken with salt and pepper. Sear thighs in oil until skin is crispy, about 13 mins. Flip and cook for another 15 mins until done. Remove.
In the same pan, cook garlic and onion until translucent. Add tomatoes and spinach until wilted. Pour in cream, salt, and pepper, bring to a boil. Stir in Parmesan and parsley until sauce thickens.
Return chicken to the pan, spoon sauce over. Enjoy!
Associate of the Month
Jay Palmer & Shirley Losek
This month we could not choose one employee of the month because of this awesome duo in Memory Care. It is great to enjoy where you work but even more importantly that you enjoy who you work with each day. Jay Palmer and Shirley Losek make our residents feel love because they enjoy touching the lives of the residents in Memory Care here at Madison at Clermont. This tag team duo has gone above and beyond to care for our residents and each other. We would like to recognize both Jay and Shirley as employees of the month for December.
Jay Palmer has been with Madison at Clermont for more than two years. She is married with one son. It brings Jay joy being with her family and doing activities with her son and church. As a dessert lover she enjoys a great carrot cake. For the last 2 years she has enjoyed singing for the residents in Memory care.
Shirley Losek has been with us for more than one year here at Madison at Clermont. She loves her son who is now a teenager. They both enjoy spending time together at public parks. During Shirley’s down time, she takes in some chocolate and a nice cup of coffee to relax. The residents in Memory care and staff have become part of her loving family.
