Our residents had a blast at the Kickoff for the Walk to End Alzheimer’s. They enjoyed special snacks and fellowship. Residents and staff are welcome to sign up to walk or make a donation to this cause. The walk will be held October 4th at 5:30.

Tom McDaniel and Marlyne Morrow

Tom McDaniel and Marlyne-Morrow Resident of the Month

Tom was born in Booneville, Missouri. Marlyne in Dalesville, Quebec, Canada. Tom worked as a hospital administrator and Marlyne a nurse. They have been married for twenty-two years. They have two children, a daughter and a son and four grandchildren: two granddaughter’s and two grandsons. Tom and Marlyne have been residents of Legacy Reserve at Old Town for four months. Tom and Marlyne take time to enjoy two special occasions each day at Legacy Reserve. They love to absorb the splendor of sunrises and sunsets. They start their day at sunrise with a morning meditative walk that allows them to commune with nature. They thoroughly enjoy winding down by viewing sunsets from their 3rd floor balcony. These approximately two hours of daily tranquility punctuate the beginning and end of each day and help make the intervening hours at Legacy Reserve a very pleasurable experience.

Dear Legacy Residents,
Of all the words that I have been penned, the most important one is friend. I wish to thank my Legacy friends for the outpouring of love and concern shown to me and my family over our loss. Milton loved the residents at Legacy and would be most pleased. Wearing suspenders with his bathing suit to prevent a mishap will be legendary.

Healthy Apple Pancakes

Healthy Apple Pancakes

Healthy apple pancakes made right in the blender! These fluffy apple pancakes are made with oats, applesauce, a touch of maple syrup and cinnamon for the most delicious healthy breakfast.

Ingredients:
3/4 Unsweetened applesauce
2 eggs
1 and 1/2 cups Oats: instead of any flour in this pancake recipe you’ll just need some old fashioned rolled oats
1/4 Milk: feel free to use any milk you’d like
Maple Syrup
1 tsp Vanilla extract
2 tsp Baking powder
1/4 tsp of cinnamon, allspice, nutmeg and a pinch of salt
Olive oil or butter for cooking
Apple Topping:
3/4 cup diced apple
1 tablespoon butter
1 teaspoon pure maple syrup
a sprinkle of cinnamon

Directions:
Add all of the pancake ingredients to a blender and blend on high until completely smooth. Let the batter sit in your blender while you heat your pan up. If batter is too thick, you may need to add a few extra tablespoons of milk to the blender. Lightly coat a griddle with oil or butter and place over a medium heat. Once the pan is hot, add about 1/3 cup of the batter to the griddle for each pancake and cook for 2-4 minutes until pancakes slightly puff up and you see a few bubbles along the edges. Flip cakes and cook until golden brown on underside. Wipe skillet clean and repeat with more oil and remaining batter. Makes 6 pancakes total. Serves 3, 2 pancakes each. Add topping and ENJOY!

Tasha Gibbons Associate of the Month

Tasha was born on an Indian Reservation in Chinle, Arizona. She is of Hopi and Navajo descent. She was raised in Dresden, TN. She is the mother of two amazing children. She became a CNA/ Medication Technician after being inspired by her mother’s nursing home journey. She pursued education to advocate for her effectively. Tasha states that this field of work requires compassion, patience, and a special soul. She thrives here at Legacy and cherishes all the wisdom and insight the residents give her daily. Knowing she makes a difference in the lives of the residents brings her immense joy and fulfillment.
