Antonio Vivaldi (1678–1741), “Il Prete Rosso” (The Red Priest) due to his red hair and clerical status, was a Venetian composer, virtuoso violinist, and a key figure of the Baroque era. His innovative compositions and extraordinary violin skills earned him a reputation as one of the most celebrated musicians of his time.

Vivaldi composed over 500 concertos, more than 230 for solo violin, making him one of the most prolific composers for the instrument. The Four Seasons is his most famous work; his music legacy has inspired musicians over the centuries. The Four Seasons was composed around 1721 and published in 1725 in Amsterdam.

Elsa Hirsch

Elsa is originally from Tallahassee FL where she graduated high school 1950 she moved to Georgia to attend The University of Georgia from 1950 – 1954 where she was a proud Georgia Bulldog & cheerleader!
Elsa has a degree in journalism from UGA.
Later she got a job in Columbus GA working for WGBA Radio Station. Elsa has lived in Columbus for 68 years. She was happily married to her husband Milton Hirsch for those 68 years where they raised their 3 children. Elsa has also 5 grandchildren & 2 great grandchildren.
Elsa has done it all from owning a antique business to also owning a women’s resale shop she is truly amazing.

May 1st of 2025 Elsa will have lived at Legacy Reserve at Old Town for 2 years. Elsa is truly a light. She is one of the most vibrant people you could ever meet. We here at Legacy are beyond blessed to have someone like her here. Her strength of character, her passion & her zeal for life are an absolute inspiration to us all. Thank you Elsa for being who you are!

“You have to make yourself available. You have to get out & do things. Try to join in, try to accept things. If you are able, it is important to take advantage of activities & to get moving. Don’t shut yourself away. Do what you CAN do. It is so important to mingle & get yourself out there & get outside! And lastly, life is what you make it. Live life.”

Recipe Spotlight:

Ragù alla Bolognese

Ragù alla Bolognese

Ingredients:
1 medium onion, chopped
1 celery stalk, chopped
1 small carrot, peeled, chopped
3 Tbsp. extra-virgin olive oil
1 lb. ground beef chuck (20% fat), patted dry
Kosher salt
3 oz. thinly sliced pancetta, finely chopped
1 cup dry white wine
⅓ cup tomato paste
1 bay leaf
Pinch of finely grated nutmeg
2 cups (or more) homemade chicken stock or low-sodium chicken broth
1 cup whole milk
1 lb. fresh tagliatelle or pappardelle, or dry rigatoni
2 oz. finely grated Parmesan (about ½ cup), plus more for serving

Directions:
Finely chop onion, celery, and carrot in a food processor. Brown ground beef in olive oil, then set aside. Cook pancetta until crisp, then soften the onion mixture in the same pot. Return beef, add white wine, and cook until evaporated. Stir in tomato paste, bay leaf, and nutmeg. Add chicken stock, milk, and salt. Simmer on low for 2–2½ hours until thick and tender. Cook pasta until al dente. Toss pasta with sauce, Parmesan, and pasta water.

Serve with extra Parmesan. Enjoy!

Donna was born in England, but grew up in Pittsburg PA where she lived for 30 years. Later she moved to Charlotte NC with, later she moved to Fort Worth TX where she retired from being a project manager for a printing company in Dallas Texas where The Dallas Cowboys were one of her clients. Donna has been happily married to her husband Tom for 39 years.

Donna says her greatest accomplishment in her life is raising her son Jody. She is so proud of the man he has become & later she moved to Columbus GA to be closer to him. She has lived in Columbus GA for 7 years now & enjoys spending time with her family including her 16 year old granddaughter. Donna truly loves her family.

It September of 2025 Donna will have worked at Legacy Reserve at Old Town for 5 years. Donna has been a vital part of our concierge team throughout those years. Donna’s kind & nurturing heart show in her work ethic. Donna loves our residents, interacting with them & getting to know their stories. Donna’s kind & thoughtful heart are a huge part of who she is & how she works. We are truly blessed to have here as a part of our team.

As a young mother, take time out for yourself make sure you take the time to do something for you.
