Juneteenth

June 19th was Juneteenth. Juneteenth marks the day in 1865 when federal troops freed the last enslaved people in Texas, two and a half years after the Emancipation Proclamation. Residents of Legacy Reserve at Old Town celebrated the day by sharing a homecooked, soul food meal and watching informative, inspirational documentaries. They learned about the significance of the day and why it an integral part of our American history.

Strawberry Banana Granola Parfaits

With the summer heat rising, this refreshing, satisfying breakfast or desserts will be sure to hit the spot! Ingredients needed: 1 1/2 cups of granola, 2 cups plain Greek yogurt, 2 large bananas (sliced), 1 cup fresh strawberries (sliced) To serve, alternate layers of Greek yogurt, granola, sliced bananas, and fresh strawberries in 4 parfait dishes or mason jars. Enjoy!

Shark Valley

If you want to see the vast beauty of the Everglades and more alligators than you can count, then Shark Valley should be your #1 stop! Shark Valley is in the heart of the Everglades freshwater marsh. It boasts a rich array of wildlife, including abundant alligators, wading birds, turtles, and various other species like herons, egrets, and ibises.

Beach Bubba Bingo for a Cause: Alzheimer's Association

Beach Bubba Bingo, a favorite resident pastime returned last month with the arrival of Summer. We here at Legacy Reserve decided to play bingo with a generous twist. Residents were able to make a donation to the Alzheimer’s Association and the winner of the cover- all or blackout round would also receive a portion of the collected pot. We will continue this fundraiser until October when we make our contribution to the Alzheimer’s Association and participate in the Walk to End Alzheimer’s. Legacy cares. Legacy Gives Back.

Resident Bee of the Month

Richard Wright

Richard was born in Herculaneum, MO. He was married to his wife, Dorothy for 58 years prior to her passing in 2012. He has four children, eight grandchildren, and fourteen great- grandchildren. Richard has resided in Columbus, GA for forty- one years and at Legacy for almost two years. He is a retired Major in the United States Army. Richard loves to travel and has traveled extensively. Since 1997 he has been diligent in his volunteering efforts and continues to volunteer weekly with St. Francis Hospital and the National Infantry Museum. Richard is a joy to have a Legacy Reserve, and we are proud to call him our resident bee of the month.

Whether it’s through a 401(k) or another retirement account contributing regularly will set you up for success. Take stock of current expenses and consider how they might change in retirement. Don’t forget about social security. Knowing when to start taking benefits can make a big difference in your financial well-being. Recipe Spotlight:

Grilled Grouper with Mango Salsa Recipe

Ingredients:
2 mangos, diced into 1/2” pieces
2 jalapeño, seeded and minced
1/2 red onion, diced into 4” pieces
1/8 cup fresh cilantro, minced
1 tsp lime zest
2 oz fresh lime juice
2 garlic cloves, minced
Sea salt, to taste
8 grouper or red snapper fillets
Avocado oil
Salt
Freshly ground black pepper

Directions:
Combine all the salsa ingredients. Cover, and refrigerate.
Brush both sides of the fish with oil and season with salt and pepper.
Preheat grill to medium-high heat (350° to 400°) and make sure your grates are clean or the fish will stick.
Cook fish with lid closed for 3 to 4 minutes on each side, or just until fish begins to flake and is opaque in the center.
Serve with mango salsa.

Colette Marshall is from Ellerslie, GA. She has three children. She has been a CNA for twenty-six years. She loves people and taking care of them. She enjoys attending church, traveling, and being with her family.
Colette is an asset to Legacy. Her courtesy to others is impeccable. The empathy she shows to our residents is top notch. Her attendance and devotion to our team is an example of the greatest of all work ethics. We are beyond proud to work alongside her.
