Karen Knight

Karen Knight Associate of the Month

Karen’s journey began in Chicago, where she was born and raised. She then moved to Michigan to raise her family of three, dedicating herself to being a stay-at-home mom, a role she considers her greatest accomplishment. In 2013, she moved to Texas to be closer to her family, where her passion for helping people continued to shine.
Karen’s inspiration stems from her love of assisting others. She spent years as a personal assistant to Sun City residents and transitioned to working in Independent Living after COVID-19. Her compassion and big heart make her a beloved member of our community. Karen finds immense joy in her job, likening it to having a large, extended family. She enjoys getting to know the residents and making a positive impact on their lives, which reminds her of caring for her own mother back in Illinois.
Karen has been happily married to James for the past two years. Together, they share a love for their family, including their three granddaughters and their beloved dogs: a Maltipoo named Angel and two Chihuahuas, Tigger and Henry. In her spare time, Karen enjoys helping James walk dogs, gardening, decorating, crafting, and taking vacations.
Working at The Oscar has been a fulfilling experience for Karen. She appreciates the happy atmosphere created by both the residents and her coworkers. Her dedication and positive energy make her a standout employee, and we are thrilled to recognize her as Employee of the Month.
Congratulations, Karen, on this well-deserved recognition. Your unwavering commitment to helping others and your joyful spirit inspire us all.

Dive into Shark Week at The Oscar!

Get ready to fin your way through a week-long celebration of the ocean’s most fascinating creatures – it’s Shark Week at The Oscar!
Mark your calendars! The fun starts on Monday, July 8th. We’ve got a fin-tastic lineup of activities to keep you entertained all week long:
Monday (July 8th): Show your ocean spirit! Wear blue and let’s kick off Shark Week in style.
Tuesday (July 9th): Calling all speed demons! Join us for some Shark Races. We’ll have a variety of fun activities that will test your agility and aquatic prowess.
Wednesday (July 10th): Dust off your fishing hat and tackle box! It’s Wear Your Fishing Gear Day. No need for a rod this time, just come dressed for a day at sea!
Thursday (July 11th): Get ready to fin-ally show off your knowledge! It’s Fin Day. Wear your favorite shark shirt or fin and join Mari from Bedrock Home for some Shark Games filled with trivia and fun.
Friday (July 12th): Dive into a marathon of Shark Movies all day long! Settle in, and get ready for an epic underwater adventure.
Don’t miss out on this exciting week! Shark Week is a great way to learn more about these incredible animals, through our documentaries and games, and have some laughs while a bond with your fellow residents. We’ll see you there!

This trendy outdoor venue features live music, delicious food and drinks, and a spacious patio perfect for mingling with friends and neighbors. Recipe of the Month

Grilled Grouper with Mango Salsa Recipe

Ingredients:
2 mangos, diced into 1/2” pieces
2 jalapeño, seeded and minced
1/2 red onion, diced into 4” pieces
1/8 cup fresh cilantro, minced
1 tsp lime zest
2 oz fresh lime juice
2 garlic cloves, minced
Sea salt, to taste
8 grouper or red snapper fillets
Avocado oil
Salt
Freshly ground black pepper

Directions:
Combine all the salsa ingredients. Cover, and refrigerate.
Brush both sides of the fish with oil and season with salt and pepper.
Preheat grill to medium-high heat (350° to 400°) and make sure your grates are clean or the fish will stick.
Cook fish with lid closed for 3 to 4 minutes on each side, or just until fish begins to flake and is opaque in the center.
Serve with mango salsa.

Beatrice Berk

A Trailblazer and Beacon of Elegance
We are thrilled to introduce Beatrice as our Resident of the Month. Born and raised in Cleveland, Ohio, Beatrice’s life has been marked by resilience, innovation, and a touch of glamour. She married her beloved husband and together they raised three children. After his untimely passing at the age of 52, Beatrice took a bold step forward and moved to Detroit, where she took over his car dealership.
Breaking barriers, Beatrice became the first lady of General Motors, championing the role of women in the automotive industry. Recognizing that women were an increasingly significant market for cars, she initiated women’s seminars, empowering many to make informed purchasing decisions.
Her career took another exciting turn when she moved to Chicago and became a personal shopper at Bloomingdale’s. Renowned for her impeccable taste and dedication, Beatrice was celebrated as the best of the best. Her achievements were highlighted by an unforgettable three-day stay at the Waldorf Astoria in New York and her picture prominently displayed in Bloomingdale’s window on Lexington Avenue.
After a fulfilling career, Beatrice retired to the Polo Club in Boca Raton, Florida, where she enjoyed a serene and joyful life. Eventually, her daughter’s wish for her to be closer prompted Beatrice to search for a new home. She found The Oscar and knew immediately it was the perfect place for her.
Beatrice has embraced life at The Oscar, cherishing the beautiful surroundings and the warm community. She often stands on her balcony, looking out at the fountains and feeling as if she is at a five-star resort. Beatrice knows that the wait for the Oscar to open was well worth it, as she finds immense joy and satisfaction in her new home.
Beatrice’s story is one of strength, elegance, and an enduring spirit. We are honored to have her as part of our community and to recognize her as Resident of the Month. Her presence enriches The Oscar, and we look forward to many more shared memories with her.
