Annette Changala
The Oscar is thrilled to announce Annette Changala as our Associate of the Month!
In her eight months with The Oscar family, Annette’s passion for housekeeping has shone brightly, creating a warm and welcoming atmosphere for our residents. When asked about her motivation, Annette simply stated, “My passion for housekeeping.” Annette particularly enjoys connecting with residents and seeing their happiness with her work. Each day is a fresh opportunity for her to accomplish new goals and make a positive impact. A cherished memory for Annette is the laughter and fun shared with both coworkers and residents during our Halloween celebrations – a day filled with smiles and meaningful connections.
What Annette appreciates most about The Oscar is the strong sense of family. “It feels more like a family — everyone is so nice,” she shares, highlighting the positive and caring environment that aligns with her own values. Annette believes a great team member is proactive and always ready to help. Her advice to new employees is heartfelt: “Love what you do and do your best.”
Outside of work, Annette enjoys shopping, dining out, movies, and learning new things – with shopping and dining being her true passions! Family is incredibly important to Annette, and she treasures her relationships with her mom, son, husband, father-in-law, and brothers.
Annette’s positive attitude, dedication, and caring spirit make her an invaluable member of our team. We are so fortunate to have her at The Oscar!

Get ready to make a splash and boost your fitness in a fun and refreshing way! We are thrilled to announce the launch of our new Water Aerobics class with Fox Rehabilitation, starting on Wednesday, May 7th. Join us every Wednesday at 1:00 PM in the pool for a fantastic low-impact workout. Water aerobics is a gentle yet effective way to improve cardiovascular health, strength, and flexibility, all while being easy on the joints. It’s also a wonderful opportunity to socialize and enjoy the water. Don’t forget your swimsuit and towel – we can’t wait to see you there!

Around the World with Atlas
A Land of Spirit, Color, and Eternal Stories, Mexico is more than a country—it’s a heartbeat, a song carried by the wind across deserts, jungles, mountains, and beautyful beaches. A place where ancient civilizations whisper through pyramids and murals, and modern life dances to the rhythm of a strong and unique cultural heritage.
The word “México” comes from the Náhuatl words “Metztli” (moon) and “xictli” (navel or belly button), meaning “the belly button of the moon.” The Mexicas pronounced it “Meshico.”
According to legend, the Mexica people were the last of the nomadic tribes to arrive in central Anáhuac (yep, that was the ancient name for the heartland of what’s now Mexico). They came from a mythical island called Aztlán—which is why they’re also called Aztecs. They were searching for a sign sent by their main god, Huitzilopochtli: an eagle perched on a prickly pear cactus, devouring a snake. That was the sacred place where they were to build their city.
And they did find it—right in the middle of a vast lake called Texcoco. Legend says they took refuge on that small patch of land in the lake and founded their settlement, Tenochtitlan, around 1325. By the time the Spanish arrived in 1519, they were stunned by the sight of a majestic, dream-like well-organized metropolis—Tenochtitlan—one of the largest cities in the world at that time.

Birria de Res Tacos (Beef Birria Tacos)

Birria de Res Tacos (Beef Birria Tacos)
Mexican birria tacos, Jalisco-style, made with braised beef that’s slow-cooked in a fragrant 3-chile sauce with a delicious spice mix. Crispy tacos, and tender, mouth-watering beef team up with melted Mexican cheese in this impressive meal. This recipe takes a little time but it’s so worth it!
Ingredients
Sauce:
6 dried guajillo chile peppers, seeded
4 dried chile de arbol peppers, stemmed and seeded
2 dried ancho chiles, stemmed and seeded
1 tablespoon olive oil, or as needed
4 medium Roma tomatoes
2 tablespoons white vinegar
2 cloves garlic
2 teaspoons ground black pepper
4 whole cloves
1 pinch ground cinnamon
1 pinch ground cumin
1 pinch ground thyme
1 pinch dried marjoram
1 pinch dried oregano
1 pinch salt
Meat:
4 pounds beef chuck roast
salt and freshly ground black pepper to taste
Tacos:
18 corn tortillas
1 large white onion, finely chopped
1 bunch fresh cilantro, chopped
1 cup shredded queso asadero (white Mexican cheese) (Optional)
Directions
1. Gather all ingredients. Preheat the oven to 325 degrees F (165 degrees C). Fill a pot with water and bring to a boil.
2. Start the sauce: Add guajillo, arbol, and ancho chile peppers to the boiling water; boil for 5 minutes.
3. Remove pot from the heat and allow peppers to soak until cool. Drain, reserving 1/4 cup of the cooking water.
4. Meanwhile, sear the meat: Rinse beef and pat dry with paper towels. Cut beef into chunks if desired, and season with salt and pepper.
5. Heat oil in a Dutch oven over medium-high heat. Add beef and cook until browned on all sides, about 10 minutes. Remove from the heat.
6. While the beef is searing, continue the sauce: Line a heavy cast-iron grill pan or griddle with aluminum foil and place over high heat. Arrange tomatoes in a single layer on top. Grill until tomato skin is burned on all sides and begins to peel, 3 to 5 minutes.
7. Place cooled chile peppers into a blender. Add grilled tomatoes, vinegar, garlic, 2 teaspoons black pepper, cloves, cinnamon, cumin, thyme, marjoram, oregano, and salt in a blender. Pour in the reserved 1/4 cup of chile water and blend until smooth.
8. Strain chile sauce through a mesh strainer and pour over browned meat in the Dutch oven, turning the roast so it is completely covered with sauce; cover with a lid.
9. Bake in the preheated oven, basting meat every 45 minutes with sauce, until birria begins to fall apart, 3 to 4 hours. Remove the lid and bake, uncovered, until birria is crispy on top, about 20 minutes. Remove from oven, cover with 2 layers of aluminum foil, and allow to rest in a warm area for 10 minutes.
10. Remove meat to a cutting board and strain off any fat from the sauce. Shred meat with two forks, then return meat to the pot and stir with the sauce to combine.
11. Assemble and heat tacos: Fill each tortilla with birria and top with Mexican cheese, chopped onion, and cilantro. Warm tortillas on a griddle, flipping until both sides are crispy and cheese is melted.
12. Serve with extra sauce on the side for dipping

Corn has been a staple of Mexican culture and cuisine for thousands of years, dating back to ancient civilizations long before the Mexicas and even the Pre-classical Mayans wich are prior to 1000 BC. It’s used in countless traditional dishes such as tortillas, tamales, pozole, tacos, chilaquiles, enchiladas, sopes and so on.
They were masters in combine native ingredients like chile, cacao, and vanilla, Mexican cuisine has shaped global tastes and preserved a deep connection to the country’s agricultural and cultural roots.
Resident of the Month
Gary Pinkston
This month, The Oscar proudly recognizes Gary Pinkston as our Resident of the Month! Since moving in, Gary has embraced our community, enjoying the diverse backgrounds of his fellow residents. He notes the friendly and supportive atmosphere at The Oscar.
Gary enjoys reading and staying informed. He was active in sports like pickleball and tennis and shared his musical talents with the Sun City Singers and the Follies orchestra. He also served as treasurer for both the pickleball club and the singers for seven years.
Family is central to Gary’s life. He and his wife, Kathy, will celebrate their 56th anniversary this November and are proud of their two sons and three grandchildren. Originally from Oklahoma, Gary is a graduate of Oklahoma State University, the University of Central Oklahoma, and Oklahoma City University School of Law. He also served in the Oklahoma Army National Guard. Professionally, Gary had a long career in bank investment divisions and successfully managed exchange-traded funds listed on the New York Stock Exchange.
Gary’s life reflects hard work, passion, and a love for family and community. We are delighted to have him as part of The Oscar family!
