Barbara Labbe

Barb moved here about a year and a half ago from Southern Maine with her husband, though she originally grew up in Nothern Maine. A proud mother of two daughters and grandmother to four wonderful grandkids, Barb also has a loyal companion in her dog, Bella. With over 41 years of experience in banking, she brings her dedication and warm personality to everything she does. Outside of work, Barb enjoys crocheting, knitting, solving puzzles and walking.

Visitors have unparalleled opportunities to observe wildlife in an intact ecosystem, explore geothermal areas that contain about half the world’s active geysers, and view geologic wonders like the Grand Canyon of the Yellowstone River.

Community News

We’re excited to share that we recently held our first Resident Council meeting! This is a wonderful opportunity to help make our community even better. Resident Council meetings will be held monthly and will soon be open for residents to attend. We look forward to seeing how the council will shape the future of our activities and events.
Speaking of activities, we’re heading into a busy and exciting season, and there’s something for everyone! Be sure to check out the calendar for upcoming events and activities. As a reminder, come activities will require sign-ups due to limited supplies, so if you see an asterisk (*) next to an event you’re interested in, be sure to sign up early to secure your spot. Sign up sheets are located on the counter in the DLV.

When Hurricane Milton prompted the evacuation of The Canopy to Orlando, it became a true testament to the strength and spirit of our residents and staff. Most of our residents faced the situation with incredible grace and resilience, adjusting with positivity and calm.
The staff that accompanied them were nothing short of extraordinary. Their unwavering dedication ensured that everyone was comfortable, cared for and reassured throughout the entire experience. Whether helping residents settle in or providing emotional support, the team worked tirelessly to maintain a sense of normalcy.
The return journey was undoubtedly an adventure, and everyone was incredibly grateful to see The Canopy.
This experience demonstrated the true heart of our community– one built on resilience, teamwork and the ability to come together in times of uncertainty. We are incredibly proud of how our residents and staff turned a challenging situation into a reminder of our shared strength and unity.

Leadership Advancements

Hector and Jeffrey | The Canopy at Beacon Woods

We are thrilled to announce two well-deserved promotions within our community. Please join us in congratulating Jeffrey, who has been promoted to Assisted Living Coordinator, and Hector, who has stepped into the role of Memory Care Coordinator!
Jeffrey has been a valuable part of our team, demonstrating exceptional care and dedication to our residents. In his new role as AL Coordinator, he will continue to bring his compassionate leadership and expertise to ensure that our residents receive the highest quality of care in a supportive and enriching environment.
Hector, who has also shown remarkable commitment and skill, has been promoted to MC Coordinator. His deep understanding of the unique needs of our MC residents, combined with his patience and kindness, makes him the perfect fit for this vital role. We know he will continue to enhance the lives of our MC residents with his thoughtful and attentive approach.
We are excited to see the positive impact both Jeffrey and Hector will have in their new positions, and we are confident they will continue to elevate the standard of care within our community. Congratulations to both!

Recipe Spotlight

Crawfish Fettuccine

Ingredients:
Fettuccine Noodles
Crawfish, shrimp and crab boil seasoning
Butter, unsalted
Shallots
Garlic Cloves
Creole Seasoning
Worcestershire Sauce
Cream of Chicken Soup
Velveeta Cheese
Canned Tomatoes and Chilies
Crawfish Tail Meat
Green Onions

Directions:
Boil water with seafood seasoning, cook fettuccine until al dente, then drain (save some pasta water).
In a skillet, melt butter over medium-high heat, cook shallots and garlic until translucent.
Add chicken soup, Creole seasoning, tomatoes, chilies, and Worcestershire sauce. Bring to a boil.
Stir in cubed Velveeta until melted.
Add crawfish tails and green onions; cook for 2 minutes.
Combine fettuccine with the sauce. Cover and bake at 350°F for 15 minutes. Serve.

Catherine Drosdick

Catherin Drosdick, Resident of the Month

Cathy proudly served as a nurse, first in the Navy, followed by years in Med-Surg, and later in hospice care, where she dedicated herself to comforting those in need. A devoted wife, she was married for 50 wonderful years, and is a proud mother and grandmother. Cathy’s faith has always been at the center of her life. As a devout Catholic, she spent much of her time volunteering at her local church, helping those in her community. Her warmth, compassion and deep sense of service are admired by all who know her.

Fall Festival

Fall Festival

Our recent Fall Fesitval was a fun-filled success! The highlight of the event was our incredible balloon artist, who had everyone laughing with his creative antics and impressive balloon designs. Residents and families enjoyed a lively afternoon filled with games, prizes, carnival food and memorable moments.
A special congratulations to Jane Robinson, who had an especially victorious day. Not only did she win at the kissing booth by guessing the closest number of Hershey kisses in the jar, but she also took home the prize for the best decorated pumpkin in our contest. Her creativity and spirit truly shined!
Looking ahead, we’re excited to announce our next big family event— Thanksgiving Dinner on November 28th. It promises to be another wonderful gathering, and we encourage all families to join. Please RSVP to John at jcordero@thecanopyatbeaconwoods.com to secure your spot. Tickets for this event are $20 per person.
