Month’s Celebrations

Father’s Day 15th

While the Inca Empire is the most renowned civilization of Peru, it was preceded by a rich array of cultures that laid the groundwork for its eventual rise

Associate of the Month

Marion Derisma

Since joining our family on February 8th, 2024, Marion has shown an outstanding commitment to the care and well-being of our residents. She began working on the second shift, providing compassionate care with dedication and excellence.

Her hard work and positive attitude quickly stood out, leading her to take on the role of Team Leader on the third shift, where she continues to go above and beyond in everything she does. Her passion for her work shines through in every task she completes, always with a smile and a heart full of dedication.

Marion, we are beyond grateful to have you as part of our big family here at The Canopy! This recognition is just a small token of how much we appreciate your efforts and unwavering dedication.

Congratulations, Marion! You truly deserve it.

Sounds of Peru

Alexa play "If I could" from "Simon & Garfunkel"

“El Cóndor Pasa” is so iconic that, in 2004, Peru declared it part of the nation’s cultural heritage. The original version is an orchestral piece from the 1913 zarzuela El Cóndor Pasa, composed by Peruvian musician Daniel Alomía Robles and inspired by traditional Andean music.

The most internationally recognized version is “El Cóndor Pasa (If I Could)” by Simon & Garfunkel, released in 1970 on their album Bridge over Troubled Water. Among hundreds of officially recognized adaptations, this rendition introduced the song to a global audience.

🦙 Amazing Facts about Peru
Machu Picchu Is One of the New Seven Wonders of the World
Built in the 15th century by the Incas and rediscovered in 1911, this mountaintop citadel is Peru’s most iconic site—and a breathtaking symbol of human ingenuity.

Mother's Day Lunch

At The Canopy at Beacon Woods, we celebrated the amazing mothers in our community! 💐👵🏼💖 Chef John prepared a delicious dish just for them, made with love and care. 🍽👨‍🍳✨ To make the afternoon even more special, the talented Karina Hernández filled the room with music and joy. 🎤🎶😊 It was an unforgettable lunch for our beloved mothers — full of smiles, love, and beautiful memories. 🥰🌷🎉

Around The World to Mexico

In May we traveled Around the World to Mexico! ✨
Our residents dove into the vibrant culture 🎨 of this beautiful country by creating their very own Frida Kahlo inspired floral crowns 💐👑, in a fun and creative DIY led by our amazing Business Office Director, Denise Feliciano 🙌🏼💖. Everyone truly enjoyed this colorful craft 🎭 and expressed themselves through flowers 🌸, art 🎨, and smiles 😄

Recipe Spotlight

Iconic Peruvian Ceviche

Fresh, zesty, and effortlessly elegant, this is Peru on a plate.

Ingredients (serves 2):

250g fresh firm white fish (sea bass, corvina, or halibut), diced
Juice of 4–5 limes
½ red onion, very thinly sliced
1 small red chili or ají limo, sliced
Salt to taste
A few cilantro leaves, chopped
Optional: cooked sweet potato and corn (for the traditional side)

Directions:
Combine fish, lime juice, salt, and chili in a bowl. Let marinate for 10–15 minutes until the fish turns opaque (“cooked” by the citrus). Add red onion and cilantro just before serving. Serve cold, with sweet potato and Peruvian corn if available.

Resident of the Month

Dianne Kazimir

We are proud and delighted to recognize Dianne Kazimir as our Resident of the Month for June here at The Canopy at Beacon Woods.
