Isnar came to us in mid-August 2024. At The Canopy we feel lucky to have a person like Isnar on our team. He is a very respectful person, kind to our residents and very responsible, always looking to do some activity or dance for our residents. We will always be grateful to have you on our team!

Waterfalls Galore:
Iceland is home to thousands of waterfalls, each with its unique beauty. Among them are Gullfoss, the “Golden Falls,” and Seljalandsfoss, which allows visitors to walk behind its cascading waters for a magical view.

Icelandic Vibes

Alexa, play “Joga” from Björk’s album “Homogenic”

Homogenic is the third studio album by Icelandic recording artist Björk. It was released on 1997 by her own label One Little Indian Records.

Björk has consistently pushed musical boundaries, blending genres like electronic, classical, and avant-garde. Her music, art, influence and carisma have resonated far beyond Iceland, making her an international symbol of creativity and individuality.

We are looking for High School Aged kids to come in one evening a week to work with our seniors and their technology devices, TV’s etc. Seniors are incredibly adept at learning new technology and enjoying learning more about it each day.

Iceland’s dramatic landscape is shaped by its active volcanism and vast glaciers. It is home to over 130 volcanoes, including Eyjafjallajökull, and Europe’s largest glacier, Vatnajökull.

During summer, Iceland experiences the Midnight Sun, with almost 24 hours of daylight. In contrast, winter brings long nights, creating the perfect setting for Northern Lights displays.

First Year Anniversary

On January 9, 2025, we celebrate a year full of Special moments, growth and the opportunity to share unique experiences with all of our resident and families. This first year has just the beginning of what we hope will be a long history of connection, learning and many more experience to share. Thank you for being part of this dream, for your constant support and for choosing us every day.

Bacon Broccoli Salad

Bacon Broccoli Salad

Ingredients:
5 slices thick-cut bacon
1 pound broccoli florets
1/2 medium red onion
1 medium scallion
1/2 cup mayonnaise, preferably Kewpie
1/2 cup plain Greek yogurt
3 tablespoons rice vinegar
2 tablespoons granulated sugar
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 medium lemon
1/2 cup sliced almonds
1 tablespoon toasted white sesame seeds, plus more for garnish

Instructions:
Cut 5 thick-cut bacon slices crosswise into 1-inch pieces. Place in a large skillet and cook over medium-low heat until browned and crisp, 8 to 10 minutes.
Meanwhile, prepare the following, adding each to the same large bowl as you complete it: Cut 1 pound broccoli florets into rough 3/4-inch pieces (about 6 cups). Finely chop 1/2 medium red onion (about 2/3 cup). Thinly slice 1 medium scallion.
When the bacon is ready, use a slotted spoon to transfer it to a paper towel-lined plate. Transfer 2 tablespoons of the rendered bacon fat to a medium bowl and discard the remaining fat.
Add 1/2 cup mayonnaise, 1/2 cup plain Greek yogurt, 3 tablespoons rice vinegar, 2 tablespoons granulated sugar, 1 teaspoon kosher salt, and 1/2 teaspoon black pepper to the bacon fat and whisk to combine.
Finely grate the zest of 1 medium lemon over the broccoli (about 1 teaspoon). Juice the lemon over the broccoli (about 3 tablespoons). Add the dressing, half of the cooked bacon, 1/2 cup sliced almonds, and 1 tablespoon toasted white sesame seeds. Toss until well combined.
Garnish with more sesame seeds and the remaining bacon, and serve either at room temperature or chilled.

Margo and Donald have been phenomenal residents here at The Canopy at Beacon Woods and we are truly blessed to have them here with us. They have been married for 55 years. They have 11children, 22 grandchildren and 13 grandchildren.
