The Tudor Rose

A timeless symbol of unity, the Tudor Rose combines the red rose of Lancaster and the white rose of York—emblems of rival houses during the Wars of the Roses. When Henry VII united the two through marriage, this floral symbol became a lasting emblem of peace and the English crown.

Kevin joined our team in 2024 and has consistently shown a strong commitment to the health and well-being of our residents. As a valued member of the Wellness Department and a dedicated Med Tech, Kevin demonstrates professionalism and compassion in everything he does.

Although he is quiet and reserved, Kevin is always present and ready to help whenever needed. His steady presence and willingness to support both residents and team members make him an essential part of our community.

From the legendary album The Dark Side of the Moon, “Time” strikes like a reckoning. With its iconic clock intro and David Gilmour’s searing guitar solo, the song captures the creeping anxiety of wasted youth and the inevitability of aging. A timeless anthem wrapped in progressive rock mastery, The Dark Side of the Moon spent over 18 years on the Billboard charts, becoming one of the most enduring albums in history. “Time” remains its haunting heartbeat — a song that asks not if the years are passing, but whether we’ve noticed.

At our facility, we enjoyed a beautiful Family Day filled with joy, music, delicious food, and—most importantly—love shared between our amazing residents, their families, and our dedicated team.
Seeing so many smiles, warm hugs, and special moments reminds us of how important it is to celebrate life, freedom, and the power of togetherness.

Our amazing residents sure did! They had a blast enjoying a refreshing ice cream social and a cheerful happy hour filled with laughter, music, and sweet moments!

A big THANK YOU to Pinnacle for the delicious ice cream and to Jacob Hunt for the incredible live music that made everyone smile and dance!
We’re so grateful for days like this filled with fun, flavor, and unforgettable memories!

Hurricane preparedness Meeting

Our Executive Director Nick Seidl and the team at The Canopy at Beacon Woods had the pleasure of meeting with our residents and their families for an informative Hurricane Preparedness meeting and presentation.
This important gathering highlighted our community’s commitment to safety, with clear emergency plans, trained staff, and updated protocols to ensure we are ready and well-prepared in the event of a natural disaster.

Recipe Spotlight

Classic Shepherd’s Pie

A warm and comforting English favorite, perfect for sharing. This dish layers seasoned ground lamb (or beef), soft vegetables, and creamy mashed potatoes — then bakes to golden perfection.

Ingredients:

1 lb ground lamb or beef
1 small onion, chopped
1 cup peas and carrots (frozen or cooked fresh)
2 tbsp tomato paste
Salt, pepper, and a pinch of thyme
2 cups mashed potatoes (prepared with butter and milk)

Directions:

In a skillet, cook meat and onion until browned.
Stir in tomato paste, vegetables, and seasonings. Simmer 5–10 minutes.
Spread mixture in a baking dish. Top with mashed potatoes.
Bake at 375°F (190°C) for 20–25 minutes, or until golden and bubbly.

Resident of the Month

John Cassano

John, originally from the Catskills of New York, spent 26 years living in Rochester, NY before making Florida his home for the past 28 years. He joined The Canopy at Beacon Woods in September 2024 and has since expressed how happy he is to be surrounded by such wonderful people.

John proudly served as a Junior Grade Officer aboard a supply ship in the U.S. Navy during the Vietnam War. He has been happily married to his beloved wife, Fran, for 57 years. Together, they are blessed with a daughter, a son-in-law, and two cherished grandchildren who live nearby in Pasco County.

One of John’s favorite things at The Canopy is Chef Jon’s delicious cuisine—especially his flavorful Italian dishes!
