Meet Nick our New Executive Director

As the Executive Director, Nick’s biggest goal is to make sure every resident at The Canopy at Beacon Woods truly feels at home. He lives by the motto, “We are guests in their home,” and that mindset guides everything he does.

Before finding his true calling in Senior Living, Nick worked in the restaurant industry. Now, with over 13 years of experience in the senior living field, he absolutely loves what he does. He takes pride in listening to residents’ thoughts, concerns, and suggestions and he’s always ready to find thoughtful solutions to any challenges that arise.

Nick was born in Munich, Germany, and made the move to sunny Florida when he was 18. He’s been happily married to his amazing wife for 14 years, and together they have three children: two stepchildren (ages 20 and 17), and a lively 5-year-old daughter. When he’s not at work, Nick loves spending quality time with his family—especially outdoors and at the beach.

Our beloved residents enjoyed a beautiful celebration filled with thoughtful details, a delicious meal prepared with care by our talented Chef John, and the lovely voice of Joanne Donovan, who made the moment truly unforgettable.
Seeing their smiles and the joy in their eyes reminds us how important it is to honor and cherish those who have given so much with love and dedication.

Molly Caring K9s

We had a very special visitor today at The Canopy at Beacon Woods! Our sweet friend Molly from Caring K9s brought so much love, joy, and wagging tails to all of our residents.

Having a therapy dog like Molly around is more than just adorable — it’s healing! Her presence helps reduce stress, boost mood, stimulate memory, and bring instant smiles to everyone she meets.

A big thank you to Caring K9s for spreading so much warmth and happiness. We can’t wait for the next visit!

Recipe Spotlight

Southern Peach Cobbler

Ingredients:
4 cups fresh peaches, peeled and sliced (or use high-quality canned peaches, drained)
1 cup granulated sugar (plus a bit more for sprinkling)
1 cup all-purpose flour
1 cup milk
1/2 cup unsalted butter (melted)
1 tbsp lemon juice
1 tbsp baking powder
1/2 tsp salt
Optional: cinnamon or nutmeg for a warm touch

Directions:
Preheat oven to 350°F (175°C). Toss peaches with lemon juice and 1/2 cup sugar; set aside. In another bowl, mix flour, baking powder, salt, and the remaining sugar. Stir in milk until smooth. Pour melted butter into a baking dish—do not stir.

Pour batter over the butter, then spoon peaches and juices on top. Do not mix. Sprinkle with extra sugar (and cinnamon, if using). Bake for 40–45 minutes, until golden and bubbly. Best served warm with vanilla ice cream!

Joanne Lima

Joanne Lima is a very active and joyful resident, full of life and enthusiasm. She loves dancing, singing, and always joins in our activities with a big smile. Joanne is also incredibly thoughtful, always looking out for her fellow residents and making sure no one feels left out. She absolutely loves our Happy Hours and can never resist a tasty grilled cheese sandwich—her all-time favorite! Her positive energy and vibrant spirit brighten our community every single day.
