Born in Vietnam, she has lived in Kansas, South Dakota, and now calls Texas her home. Lily has embraced her new community with open arms. In her free time, Lily indulges in her passion for cooking and traveling, with a particular fondness for the beach, Asian cuisine, hot tea, and chocolate.

Chef David Cooking with Confidence:

Hawaiian Butter Mochi

Ingredients:

1 box (16 oz) Mochiko Flour (sweet glutinous rice flour)
2 cups (16 oz) granulated sugar
1 ½ teaspoons baking powder
½ teaspoon salt
4 large eggs, at room temperature
2 cups (16 fl oz) whole milk, at room temperature
1 can (13 fl oz) coconut milk
½ cup (4 oz) butter, melted
2 teaspoons vanilla extract

Directions:
• Preheat the oven to 350°F (180°C). Butter a 9×13-inch (23×33 cm) baking pan and line with parchment paper. Set aside.
• In a large bowl mix together the sweet rice flour, sugar, baking powder, and salt.
• Whisk in the eggs, milk, coconut milk, butter, and vanilla extract until the batter is smooth. To ensure that there are no lumps, pour the mixture through a sieve and directly into your prepared pan.
• Bake for 50-60 minutes or until golden on top. Set aside to cool down completely.
• Cut into 24 squares with a sharp knife. Store in an airtight container at room temperature for up to 2 days. Serve warm with whipped cream or vanilla ice cream if desired.

Albert Fox

Albert, a resident with a heart as big as Texas, takes center stage this month! Born and raised on a family farm in O’Brien, Albert met his sweetheart, Evelyn, in a truly Texan way – their mothers were friends! After a long-distance college romance, they married and built a life together, raising two daughters.
Albert’s career at Texas Instruments saw him help open plants in both Austin and Tennessee. But it’s his adventurous spirit that truly shines. He and Evelyn traveled extensively in their RV, with Evelyn even teaching computer science virtually to soldiers overseas!
Now a cherished member of The Oscar community, Albert is known for his outgoing personality and infectious enthusiasm. He actively participates in activities, readily connects with fellow residents, and embodies the spirit of our vibrant community.
Albert inspires everyone around him. His advice? “Don’t be afraid of change, keep learning, keep growing!” We are incredibly excited to have Albert as our Resident of the Month. His positive spirit and love for life are a true inspiration to us all!
