Mountain Thoughts By Emily Dickinson

I wondered if I might
Be like the mountains bright
That catch the early sun,
Not yet undone
By the day’s dust and heat,
But still cool and sweet.
I wondered if I could
Keep that mood
When the day’s traffic came
And the sun grew tame
And the dust and heat
Made me beat
With a fevered pulse
And a heart convulse.
But the mountains still stand,
And I understand.

Dear Residents and Loved Ones,
We are so excited that Lauren Bowen has been promoted to Dining Service Manager. She is working effortlessly in making the Assisted Living dining experience wonderful. Please make sure you look at the menus each week, if you would like to be offered another alternative, please let care staff or dining know prior to your mealtime. We have a wonderful Bistro menu that is available to you.

The activities calendar is for you! Please let us know what you want on it. We have added trivia to our list of activities, this was suggested by a fellow resident. Please come and enjoy the activities—we will put reminders on Alexa and have the caregivers remind you of things on the calendar.

We will be celebrating Oktoberfest on September 26. Why do we celebrate Oktoberfest in September? The festival’s origins date back to 1810 when Bavaria’s Crown Prince Ludwig married Princess Therese of Saxony-Hildburghausen. To celebrate the royal wedding, the citizens of Munich were invited to a grand celebration that included horse races, feasting, and beer. The following year, in 1811, state organizers decided to repeat the gathering and horse race and combine it with the annual agricultural festival. The grassy area where the townspeople gathered became known as “Theresienwiese,” which translates to “Therese’s green” in honor of the Princess’s wedding. As early as 1828, festivalgoers had begun to complain about Bavaria’s rainy October weather and pushed to move the celebration to mid-September, a more temperate time of year. Looking forward to good food, good music, and some fun!
I wish everyone a wonderful September.

Hello Residents and Family!

Hello Residents and Family!

This month I want to highlight some services that we currently offer to our residents in the community. We use Lab of Florida for phlebotomy services. Currently, it is only offered to the Assisted Living and Memory care residents, unless you are enrolled with Bluestone Physician Group. Another available service is portable Xray’s, ultrasound’s, and EKG’s. This is available through Precision Imaging. Your physician can send an order to Precision, and they will come to your room, and you wouldn’t need to drive to get them done. As you know we use Bluestone Physician Group for primary care (brochures are in the mailroom). If you want to sign up, you can go to http://www.bluestoneMD.com to register or ask Lenora or Sean for paper consents. We also have a podiatrist through Advanced Foot and Ankle that comes once a month. Consents can be obtained at the concierge desk or from Sean or Brianna. One last service is On-Site Dermatology. They also come once a month and the sign-up lists are in each department (Independent living mailroom). Consents can be obtained from the concierge or Sean and Brianna.
Thanks,
Sean Krasensky CDP, RN

Trout Eggs Benedict

Trout Eggs Benedict

Ingredients:
For Trout Eggs Benedict:
2 trout skinned and de-boned
2 tablespoons butter
Salt and pepper to taste
1 bunch asparagus
1 tablespoon olive oil
4 eggs
For Bearnaise Sauce:
1 cup melted butter
1 tablespoon white wine vinegar
3 egg YOLKS
1 tablespoon fresh dill, minced
1 teaspoon sweet paprika

Directions:
For the Trout: Preheat the oven to 400 degrees
Salt and pepper the two trout, which are skinned but still on the bone. Place a few thin slices of butter on the trout, about a tablespoon per trout. Wrap each trout in a foil packet, taking care to seal all corners so the steam cannot escape during cooking. Place the trout packets on a baking sheet. To the baking sheet, also add the asparagus. Rub the asparagus with a little olive oil and season with salt and pepper. Place entire baking sheet in oven. Asparagus and trout packets bake for about fifteen minutes. Asparagus should be tender to the bite and still a bit crunchy.
For the Bearnaise Sauce: Melt the two sticks of butter and let cool slightly. You don’t want the butter bubbling hot, but you want it to still be warm. Place the egg yolks in a blender and pulse a few times to break them up. With the blender running, add the white wine vinegar and mix for a few seconds. With the blender running, slowly stream in the warm butter. Once all the butter is added, continue to blend for a minute. Add the fresh dill, paprika, and salt and pepper. Blend for another minute. Keep the sauce warm with the lid on the blender.
For Poached Eggs: In a large pot, bring to a light boil about three cups of water. Once the pot is gently boiling, use a large spoon to create a whirlpool in the water. With the water spinning, drop the cracked eggs, one at a time, into the pot. Allow the eggs to cook for two to two and half minutes. Remove using a slotted spoon.
