Haley Howe

Haley Howe, Associate of the Month April 2024 | The Goldton at Southaven

Haley began her career in 2017 at what was then called Life Pointe Village as a care associate. This sparked her interest in a future in nursing and help her discover her love for the geriatric population. Outside of being a nurse she loves spending time with her children Colby, Connor, Heidi, and her stepdaughter Chloe. Haley loves the outdoors and would spend everyday fishing with her kids if she could. Haley is thankful for the opportunities and experiences she has encountered here at the Goldton in Southaven and look forward to spending many years with her work family. Haley is a wonderful nurse the residents love her and so do the staff. Haley congratulations!!! You deserve this honor.

Jewell Dominguez, Resident of the Month April 2024 | The Goldton at Southaven

Jewell Dominguez was born in Memphis TN, she made the Goldton in Southaven her home in November of 2023.Ms. Dominguez was married to her husband 60 years she has 1 loving son. Ms. Dominguez is the middle child of 3, she graduated from Humes High School. MS. Dominguez has traveled the world seen all types of interesting things thanks to her husband who was in the United States Navy, Ms. Dominguez stop traveling after her son was born and started her career as a security for a major trucking company. Ms. Dominguez has a love for music she enjoys dancing. When music is played in our community, and you need a dance partner look for her because she’s always ready. We love Ms. Dominguez and thank you for making the Goldton in Southaven your home. Congratulations to you!!!

Spring Deseerts

Lemon Pie

Carrot Cake

Filing ingredients:
1 cup white sugar
2 tablespoons all-purpose flour
3 tablespoons cornstarch
¼ teaspoon salt
1 ½ cups water
2 lemons, juiced and zested
2 tablespoons butter
4 egg yolks, beaten
1 (9 inch) pie crust, baked

Meringue:
4 egg whites
1/2 cup white sugar

Method:
Gather all ingredients and preheat the oven to 325 degrees F (162 degrees C).
To make the filling: Whisk 1 cup sugar, flour, cornstarch, and salt together in a medium saucepan; stir in water, lemon juice, and lemon zest. Cook over medium-high heat, stirring frequently, until mixture comes to a boil. Stir in butter.
Place egg yolks in a small bowl and gradually whisk in 1/2 cup of hot sugar mixture.

Whisk egg yolk mixture back into remaining sugar mixture. Bring to a boil and continue to cook while stirring constantly until thick. Remove from heat; pour filling into baked pastry shell.
To make the meringue: Beat egg whites in a glass, metal, or ceramic bowl with an electric mixer until foamy. Gradually add sugar, continuing to beat until stiff peaks form.
Spread meringue over pie filling, cook until brown let cool and serve.
