Linda is a true social butterfly around our community. She bring warm smiles and laughter to us all with her great sense of humor. Her loyal companion, Zoe, is always by her side, sharing in her adventures as they explore the area together. We are honored to have her as our resident of the month this month.

Icelandic Vibes

Alexa, play “Joga” from Björk’s album “Homogenic”

Homogenic is the third studio album by Icelandic recording artist Björk. It was released on 1997 by her own label One Little Indian Records.

Björk has consistently pushed musical boundaries, blending genres like electronic, classical, and avant-garde. Her music, art, influence and carisma have resonated far beyond Iceland, making her an international symbol of creativity and individuality.

Alexa, play “Don't be afraid, you have just got your eyes closed” from Múm

Finally We Are No One is the second studio album by Icelandic band Múm, the band composed the songs for the album Inside a lighthouse in the Westfjords, Galtarviti, one of the least populous and remote areas of Iceland.

The album was release in 2002, Múm is well known for the use of multiple instruments, all sort of strings, winds, percusions, flutes, choirs and uncommon instruments, their music is an intricate and whimsical soundscape that feels both intimate and otherworldly. The album captures the essence of untouched beauty and serene isolation, a timeless ode to the remote magic of Iceland.

Dear Residents and loved ones,
Welcome February, the month of love. We have a lot planned for this month and please remember, if you have any suggestions for events, trips or games you would like to see please leave a message. We are looking forward to a wonderful month filled with activities for everyone to enjoy!! We are excited about our activities around the world this year.

This month we will be learning a lot about Iceland. We will learn a lot about each country we “travel” to. If you have any stories to share on any place you have visited, please let us know.
We are training and re-training our staff to have the best customer service. I want nothing more than for you to feel welcomed and loved. I also would like to take this opportunity to remind you about the Alexa you have in your room. You may ask “Alexa, I need help.” She will answer you and help you get what you need. The pendants you wear call care staff, however you can also ask for Alexa’s help, and it will bring help.

Iceland’s dramatic landscape is shaped by its active volcanism and vast glaciers. It is home to over 130 volcanoes, including Eyjafjallajökull, and Europe’s largest glacier, Vatnajökull.

During summer, Iceland experiences the Midnight Sun, with almost 24 hours of daylight. In contrast, winter brings long nights, creating the perfect setting for Northern Lights displays.

There are moments when life feels a little gray, and we could all use a pick-me-up. Engaging in activities to boost mood is not only great for our emotional health but can also refresh our perspectives and lift our spirits. Fortunately, science shows that certain activities can have a real impact on happiness, stimulating our minds, bodies, and social connections to enhance well-being.

Here are 10 activities backed by research to help boost your mood, reduce stress, and cultivate joy in your day-to-day life.

10 Effective Activities to Boost Mood in No Time

1 – Practice Gratitude Journaling
Reflecting on the positives in life, no matter how small is a proven way to enhance mood and create a sense of fulfillment. Start a gratitude journal and write down three things you’re thankful for each day. Regularly practicing gratitude helps shift focus from stressors to the good things in life.

Though they prefer the quieter moments, their friendly presence and Boss’s playful antics have endeared them to everyone around, creating a sense of belonging that resonates throughout the community. Recipe of the Month

Kjötsúpa: Icelandic Lamb Soup

Ingredients:
2 tablespoons olive oil
1 teaspoon finely chopped garlic
3 pounds bone-in lamb shoulder or thick chops
1 medium onion, sliced
1/3 cup brown rice, or rolled oats
6 cups water
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
1/2 head cabbage, coarsely chopped
3 medium carrots, 1/2-inch dice
1/2 cup diced rutabaga
1 cup cauliflower florets, optional
4 medium potatoes, 1/2-inch dice
Salt, to taste
Freshly ground black pepper, to taste

Directions:
Heat olive oil in a large pot over medium heat. Sauté garlic for 1–2 minutes without browning. Add lamb and brown on all sides.
Stir in onion, sauté briefly, then add rice and water. Bring to a boil, skimming off froth, and boil for 5 minutes.
Reduce heat to medium, add thyme and oregano, cover, and simmer for 40 minutes.
Add cabbage, carrots, rutabaga, cauliflower (if using), and potatoes. Cook for 20 minutes until vegetables are tender.
Remove meat, chop coarsely, and return to the pot. Simmer for 5 minutes.
Season with salt and pepper, serve, and enjoy!
